Through my experience, the non-commercialised age-old-family-secret-recipe soy sauces are always the best.
However to find the perfect one it does take some effort but once you locate it you'll want to stick to it.
Commercialised sauces tend to lack in flavour and richness perhaps a different technique in the soy bean fermentation process (lacking maturity etc.) but safety and hygiene levels are ensured.

I have been to China a lot, and there are many different kinds of Soy sauce. Most of the time you do not know the brand that the resturant uses, but one that I have seen a few times is "double happiness" brand.

I'm a lovely polish mexican girl and I love kikkoman soy sauce.
Also, the little packets the restaurants give are good too!
