Here is one of my favorites.
It is from the Philippine Islands
Diniguan
1 lb. pork meat
2 cups pork blood
1 onion
1 pack laurel leaves
6 peppers (the small, hot, green ones)
1 tbsp salt
1 tbsp olive oil
1 ground pepper
1 garlic clove
Have two pots for this. One of your pots (the pork pot) should be for the pork. The other pot (the main pot) will bear the brunt of the cooking. You will use the main pot to simmer the blood, so it will be heavily stained.
The blood takes the longest to prepare. Most likely, your blood will be frozen when you buy it. Thaw it until it becomes liquid again. DO NOT cook it when it is still in its frozen state! Doing so will introduce unwanted water into the simmer and some bacteria may survive the simmer.

Alex,
I love ethnic foods also (well, everything except for Asian food). I live in Los Angeles, which is very diverse. I go to different ethnic neighborhoods and find a small Mom & Pop restaurant, and enjoy the food!
I recently went to a Persian restaurant, not too far from where I live. Oh, the food was just wonderful!

A hummus & falafel sandwich. Maybe baba ganoush &
falafel sandwich. Shawarma sandwich (gyros). Tabouli
salad. Top it off with a baklava.
For dinner an order of Fried Rice, Egg Foo Yung,
Beef & Pea Pods, and Gen. Gau's Chicken.
That's enough for an army! Mangia

Mmm, definitely go for Indian. I took a long time getting into different ethnic foods and I'm sad I hadn't tried Indian sooner! Go for the Chicken Tikka Masala with white rice and either an order of naan or garlic naan to go with it. It's absolutely delicious!

Try rice and beans. Its simple since your starting out...and seriously, who doesn't like rice and beans?
Olive Oil
2 cloves Garlic, crushed and chopped
1/2 medium to large onion chopped
2 celery ribs finely chopped
Saute all in olive oil till tender
2 small cans of whatever beans look good (the whole can, even the liquid.)
2 pkg's of sazon seasoning (found on your ethnic food or Goya isle in the grocery store.)
2 tbs. white distilled vinegar
1 1/2 cups water
Add these ingredients to the sauteed vegi's...simmer until desired thickness is accomplished. Pour over white rice, yellow rice, brown rice, jasmine rice...any rice you like. Cooked of course. :)

depends how daring you want to go, but for sushi, start with the cooked items and slowly work you way to the raw stuff. good starters are california rolls, eel (unagi) and shrimp.
if you would like to try korean food. go for the kalbi. it's a marinated and grilled beef short rib. it suits most palates.

try this, from the Philippines:
1 kg pork ribs, sliced per rib
sea salt
black pepper, ground
1/2 to 1 cup crushed garlic (up to you how much you can tolerate garlic)
vinegar (Asian types such as cane vinegar)
---
wash pork ribs, rub with sea salt, place ribs in bowl or pan, toss in the garlic, mix well, pour vinegar over meat (make sure meat is under liquid). marinate for at least 3 hours, overnight is preferred.
----
grill over charcoal. medium well.
----
serve with steamed white rice or fried rice plus a side dish of chopped white onions and tomato dressed in olive oil, vinegar, salt and pepper or guacamole. have it with beer.
enjoy.

i kind of love every ethic food. but i would start with the non Americanized Mexican try meats like cavasa and linga. they are both very good. also try African. i would advise you stay away from Norwegian though i find it repulsive
