Ingredients:
Lettuce,tomato,carrots(chopped),and your fav. veggies.
Optional: Dressing(italian, ranch,other favs)
Directions:
Place ingredients in bowl and shake around. Put desired amount in seving bowl and add a dressing.

This is a recipe that I make often, and can either eat as a meal all by itself, or as a side dish to other things, such as veggie burgers.
Corn Salad:
1 16 oz pkg frozen corn
2 cans (or more), black beans, rinsed and drained
1 chopped red bell pepper
1 onion, chopped
1 tsp. dried basil (or herb of choice)
1/2 tsp. (or to taste), cumin
salt and pepper to taste
olive oil
balsalmic vinegar
Pour corn into strainer, and run cold water over until thawed. Drain and rinse beans. Put corn, beans, red pepper, onion, basil, cumin, into bowl. Sprinkle with salt and pepper, then approx. 1 tbsp. of olive oil and balsalmic vinegar to taste (approx. 2 - 3 tbsp.), stir together and enjoy!
Ok, this does have more than 4 or 5 ingredients, but it's truly very quick to make, and is ohhh sooo yummy!! I love the beautiful colors of this salad, and the crunch of the pepper and onion. The flavors all meld together so wonderfully together! It's really a very refreshing salad any time of the year, and very filling on it's own. :)

1. Mix a couple of fresh veggies in a pan (or wok) with olive oil. Heat, stir, eat.
2. Or take the above and toss over pasta
3. Or boil some water, a bit of olive in it, throw veggies in, add veggie bouillon extract and then fast cook noodles. I use Ramen, but really any other 2 minute pasta will do. Takes 3 minutes overall to prepare.
4. Or boil potatoes, mash them with some salt and olive oil. Milk if you eat dairy products. Fry 2 sunnyside up eggs and serve with the potatoes.
Nice if you add some of the stir fry veggies from 1. above
5. Or Get some Tofu, cut it and throw it into the mix of 1.
6. If you have a trader Joes...they have "simmer sauces". Get those and throw over veggies from 1. above. Simmer for a few minutes. Eat. Yummy!
7. Dessert - Take a Cantaloupe melon, cut in half and take the seeds out of both halves. Pour Port wine into the opening. Eat and take a nap after that.
Or 8. Get a bag of lettuce, put in bowl, drip a few drops of lemon juice and olive oil on it, a bit salt. Then fry a few mushrooms in your pan in olive oil. Add salt/pepper to your liking (always). Toss over the salad.
9, Or if you are vegetarian who eats dairy - how about a cheese plate? Buy some nice looking pieces of cheese, some really yummy bread and sit down with a glass of red wine and a friend to share.

Well, zucchini's in season, so you could try this easy casserole. Chop one onion and cook in skillet until soft. Add to four cups of sliced zucchini, a cup of corn and 8 oz. of your favorite tomato sauce. Stir together and put in a casserole dish. Top with Ritz cracker crumbs (and if you aren't a strict vegan, sprinkle with some grated Parmesan cheese.) Bake at 350 for about 30 minutes. Again, if you aren't strict vegan and can use dairy products, this tastes really good topped with a dollop of sour cream. But it's great no matter what.

Fresh Tomato Pizza with Pesto
Prep: 15 min. Bake: 10 min. Makes: 4 servings
1/2 c. purchased pesto
1 16oz. Italian bread shell (Boboli)
3 med. ripe tomatoes, thinly sliced
Black pepper
1 21/4 oz. can sliced pitted ripe olives, drained
2 cups Monterey Jack or Mozzarella cheese (8 oz.)
Spread pesto evenly over bread shell. Place on a large pizza pan or a large baking sheet. Arrange tomato slices on top. season with pepper. Sprinkle with olives. Sprinkle with cheese.
Bake in a 425* oven for 10 to 15 minutes until cheese melts and tomatoes are warm. Cut into wedges and serve.
Delicious!
( you can add Italian seasoning and/or garlic with the black pepper if desired!)

Try these recipes I always do them they are FAST:
1.Bring a toast put a little tomato sauce on top of it then add mozzarella cheese and bake it in the oven for 5 mins or until the cheese is melted. (tomato sauce is the same one I used in the second recipe).
2. Boil any pasta you have home with water and a little oil and salt (oil to make it non-sticky and salt to make the water boil faster), while it's boiling put 1 large tomato or two in a blinder with little onion and green pepper, and don't forget the garlic, one clove of garlic should be enough, add little water and salt and pepper to taste, then boil them for a couple of mins. the ingredients varies you can change them if you like, or add another ingredient, sometimes I add sugar and ketchup.

How about lasagna with "no boil" noodles? Just layer pasta sauce, noodles, ricotta mixed with an egg, mozzarella, parmesan.... You can also add cooked frozen spinach. It cooks for an hour, but prep time is short and you have 3-4 days of leftovers.

my favorite quick and easy salad is as follows:
cut one or two large tomatoes into wedges. slice a cucumber(optional to peel, i like the peel though, lot's of nutrition!) and a medium red onion. drain a can of garbonzo beans. mix it all together and drizzle on your favorite italian dressing. eat right away or chill for a few hours and let all the flavors merry.
YUM. definitely easy and great for a hot day! :-)
