once upon a time, I had gone out one night to an italian restaurant and had ordered fettucini carbonara for the first time and it was the best. I've been making carbonara since but has never been the same as that of the restaurant..

Italian Scramble


1 Tbsp olive oil
1 medium potato -- cubed
1/2 lb. sweet Italian sausage
1 small onion -- chopped
1 small green pepper -- chopped
1 small red pepper -- chopped
8 eggs
2 Tbsp milk
1/8 tsp. oregano
1 firm ripe tomato (seeded and chopped) or 1 can chopped tomatoes
1/4 cup shredded mozzarella
1/4 cup grated cheese
chopped fresh parsley for garnish
Heat olive oil in large frying pan and add the potato; cook over medium heat, stirring occasionally.

Remove sausage casings and crumble the meat into the pan, cooking and stirring until lightly browned. Add onion and peppers and cook until onion is limp and potato is done.

Beat the eggs together with the milk and oregano. All at once, add the tomatoes, egg mixture and mozzarella to the pan. Lower the heat and cook, stirring lightly until eggs are soft and fluffy.

Top with grated cheese.

There is more to italian food then pasta, but it is simple and enjoyable. I have learned to cook free of a recipe and italian is what I am best at. I was raised with italian, because I am italian, but it was a visit in Italy that helped me learn to be an even better cook. I use lots of extra virgin olive oil, garlic, basil, oregano, thyme, rosemary and red chilies, all sauted with vegetables. My dishes are all vegetarian, because I don't eat meat, but I don't use meat subtitutes. Also, I recommed that you use a heavy botton stainless steel pan, because it works the best. I don't have a recipe, but I could create one. My older sister thought this dish was fantastic.

Place a generous layer of olive oil on the bottom of the pan and heat on a medium to high heat, indicated as 6 or 7 on my stove, where max is after 8, but only if using a stainless steel pan.

1 onion chopped
6 cloves garlic chopped fine
1 small bag of spinach chopped
1 medium zucchini chopped in quarters
1 green pepper chopped
1 red pepper chopped
1 large tomato diced

add garlic, onion, zucchini and spinach to the heated oil and stir until coated, then add seasonings, about 3 tablespoons of basil, 2 Tbsps of oregano, thyme and rosemary and a sprinkle of red chilies, depending on how hot you want it, about 1Tbsp of fresh ground black pepper and sea salt to taste. Saute for a few minutes, then add the green and red pepper, making sure not to over cook them. Add tomato last and cook until onions are clear. If the oil cooks away add more to keep it coated.
Separately, boil your linguine noodles, about 2 hand held bundles, in a pot of boiling salted water. I recommend linguine, because they suit this dish the best. I would recommend to use whole grain pasta, to compliment the proteins and also because it adds to the flavor of the food, I use Kamut.
Toss cooked noodles into the veggie dish and stir unitl coated with the olive oil. This dish is now ready to eat. Enjoy!

Spaghetti Cabonara

1/2 pound sliced pancetta (dry Italian ham) or bacon
2 eggs
1/2 cream
1 cup fresh grated Parmesan cheese
16 oz. thin sphagetti, cooked
Salt & Pepper
Dried red pepper flakes (optional)

Cook spaghetti according to package directions.
Reserve 1 cup boiling water.

Brown pancetta or bacon slices in a large skillet.
Add drained pasta. Stir in cream and cheese, adding reserved pasta water if necessary to thin. Season with red pepper flakes, salt and/ or black pepper.

Chicken Carbonara!

1 lb pasta (I prefer fettucini)
1 lb chicken, cut into 1 inch strips
1/2 a package of baby portobella mushrooms
1/2 lb bacon, cooked to desired crispiness, and then crumbled
1/2 c chopped onion
3 eggs
1 1/4 c whipping cream
1/2 c parmesan cheese

Heat oil in large saute pan. Add chicken, mushrooms, onion and saute until chicken is done. Add the already cooked bacon. Cook pasta in large pot of boiling salted water until tender. Drain. Whisk eggs with cream and cheese in large bowl. Add pasta to bowl and stir to coat the pasta. Pour contents of bowl into saute pan and fold meat mixture into pasta. Cook over LOW heat until sauce thickens. Top with parm cheese.

my favorite is linguine frutti di mare.

start with a dozen jumbo shrimp, dozen jumbo scallops, 1/2 lb of little neck clams and 1/2 lb of mussels.

peel and devein the shrimp and scrub the clams and mussels.

i like make my own sauce using a small can of tomato paste combined with a large can of crushed peeled and seeded tomatos. then season to taste using fresh oregano, garlic, black pepper, crushed red pepper and one bay leaf. i like my sauce on the spicey side so i add a few dashes of my favorite hot sauce too. If this sounds like too much work, using pre-bottled sauces is fine too.

put the sauce in a big deep saucepan, begin to simmer, then add the shrimp and scallops. when the shrimp start to turn a little translucent add the clams and mussels. bring to boil, then simmer on low heat untill all the clams and mussels open. discard the ones that do not open. they are no good.

that's your sauce. pour it over al dente linguine and serve with some thick crusty bread.

lasagna rollups chicken or sausauge..parboil lasagna
brush with spaghetti sauce..stuff with chicken or sausage
mixture...layer bottom of dish with sauce lay rollups in pan..cover with remaining sauce...cover with foil
mixture:ricotta cheese,mozzerella cheese,egg,parm cheese
basil,parsley flakes,salt pepper,oregano,mix together
chicken/sausage:sautee in olive oil and onion..don't cook all the way....mix with mixture..use lots of sauce,when done melt mozzarella cheese......bake at 375 for 1 hour
