These are authentic chinese eggrolls my chinese grandfather makes

2T soy sauce
1t cornstarch
1t fivespice powder
1t salt
1/2t sugar
1lb cooked shrimp chopped
3 C finely shredded cabbage
1 can bamboo shoots (8oz) drained and chopped
1/2 C mushrooms chopped
4 medium green onions sliced
1/4 C peanut butter
1 lb eggroll skins
vegetable oil

Mix soy sauce, cornstarch, five-spice powder, salt and sugar. Heat wok and add oil. Add all vegetables and stirfry for a couple of minutes. Add shrimp and soy sauce mixture. Add peanut butter. Cook and stirfry for about 3 minutes. Let cool to almost room temp.

Place about 1/4 C of filling onto the center of wrapper. Fold corner over mixture and overlap the two opposite corners. Moisten fourth corner with water and then roll up to seal. Heat oil to 360 degrees and fry for about 5 minutes. Only fry 3 to 5 at a time. Turn once during frying. Drain on paper towels. Serve with sweet and sour sauce.

Someone just told me about this recipe. it tastes really good. The ingredients u will need are: 1)2 shrimp packets (the shrimp dat u can boil: get it a grocery store. if u're making alot of shrimp rolls, then u might need more packets of shrimp) 2)1 egg 3)shredded cabbage(u can get dis from da grocery store or u can get some cabbage and cut it up really thin and small) 4)1 Won Ton Wrappers packets (look in da produce section of da grocery store for these;they're square.it depends on how many eggrolls ur cooking if u want 1 or more packets) 5)Seasonal (its a season) 6) Acccent (a season) 7)Vegetable Oil

Instructions:
1)Steam ur shrimp (boil it in a pot and follow directions on the back of packet for how long it takes and other things)
2)After ur shrimp are done, dice it up ( cut it up) and mix in a bowl with the shredded cabbage
3)Cut up an onin and mix with shrimpp and cabbage
4)Cook ur egg and mix it up in the bowl with the other ingredients.
5)Put the seasonal and accent in the bowl and mix it up.
6)Open the wrappers. Pull them out one at a time cuz they can easily tear
7)Place mix in center of each wrap.
8)Then fold according to the diagram on the package.
9)Now, pour some ol in a pan.
10)Place they eggrolls in the pan. And let it fry.
11)When it's golden brown, that's when it's done.
12)Enjoy

P.S.
They taste really good with duck sauce.

First find spring roll or egg roll wrappers at an asian grocery.

If they're the dry kind you need to soak them a bit in warm water to make them soft.

Then fill 'em. You can put whatever you want in there, but sauted cabbage is nice. Maybe some cooked vermicelli....and of course some cooked shrimp.

Then roll 'em up and deep fry 'em. You can use peanut or safflower or crisco I supose. Use a frying thermometer, or just throw a piece of bread in the oil. If it browns up in about a minute, the oils hot enough.

Shrimp Chinese Egg Rolls
Yield: 1 Servings

Ingredients

1/2 lb raw shrimp; shelled and
-deveined
1 ts sherry
1/2 ts cornstarch
1/2 ts salt
2 tb oil
4 c finely chopped celery
1 1/2 ts salt
1/2 ts sugar
1/2 lb fresh green sprouts
1/2 c fresh mushrooms
1 tb corn or peanut oil
32 egg roll wrappers (in
-vegetable dep; artment), (3

Instructions

Place shrimp, sherry, cornstarch and salt in heated oil in frying pan and
cook, stirring mixture until shrimp is pink (no longer); set aside. Heat 2
tablespoons oil and chopped celery, stirring rapidly for 2 minutes. Add
salt and sugar.

Add mushrooms and bean sprouts and cook 3 minutes. Last, add cooked shrimp.
Turn into colander and drain well; cool. Too wet a mixture will cause rolls
to split.

Fill commercial egg rolls on a diagonal, turning in ends and roll sealing.
Fry in hot grease and serve with rice and topping for rolls of apricot jam
and hot mustard. Dilute jam with water.
