You can make it using lentils as the primary ingredient. I would also put in ketchup, seasoned bread crumbs, and ground up nuts (walnuts are probably best, you can grind them in a coffee grinder). The ground nuts will put in some of the fat that meat would have (but a healthier, unsaturated fat) and keep it from being too dry, the way a lot of lowfat/nonfat foods are. Check out recipesource.com. They have like 10,000 recipes, and you can find recipes for pretty much ANYTHING there.

We make this all the time. I think it could easily be adapted to be vegan by using soy cheese, egg replacer, and margarine.

1 and 1/2 cups lentils
1 cup grated/shredded Cheddar cheese
1 onion chopped
salt and pepper to taste
1 teaspoon dried herbs (rosemary,sage, thyme or a blend or an herb you prefer)
1 cup breadcrumbs (I use Italian seasoned)
1 egg, beaten
3 tablespoons butter

Preheat oven to 350.
Lightly grease a 1 lb. loaf tin.
Wash lentils thoroughly and drain.
Cover lentils with 3 to 3.5 cups water in a large saucepan, cover, and bring to a boil.
Reduce heat and simmer lentils for 20 min. or more, until fairly soft.
Mix cheese, onion, salt, pepper, and herbs in with cooked lentils.
Add breadcrumbs, egg and butter to lentil mixture and stir well. Add more breadcrumbs if the mixture seems too wet/ sloppy.
Press mixture into loaf pan and bake for 40-45 min.

Serve with canned mushroom gravy.

What a bunch of smartasses! I am not vegan but maybe I can help. Substitute fresh portabella mushrooms and or tofu for meat. Sautee veggies first.
Try this:
4 cups of portabella mushrooms or/and tofu
1/2 cup minced celery
1/4 cup shredded onion
2 cups soft breadcrumbs or/and smashed crackers
beef broth or boullion or chicken broth or boullion
garlic to taste
salt and pepper to taste
2 eggs
olive oil

Sautee all veggies in olive oil till tender. Soak mushrooms and or tofu in broth for at least an hour. Mix everything together in mixing bowl. Add olive oil for fat. If you mix is to wet, add more bread crumbs If too dry, add more olive oil. (you could add a half can of cream of mushroom soup to the mix too, or tomato sauce)
Shape into a loaf and bake for 30-45 mins at 350.
Pour tomato sauce or cream of mushroom soup on top and bake about 10 more mins and serve.

My brother is a vegan and I make this for him when he comes to visit. He loves it, and I hope you do too.

INGREDIENTS:
1/2 (14 ounce) package vegetarian ground beef (e.g., Gimme Lean TM)
1 (12 ounce) package vegetarian burger crumbles
1 onion, chopped
2 eggs, beaten
2 tablespoons vegetarian Worcestershire sauce
1 teaspoon salt
1/3 teaspoon pepper
1 teaspoon ground sage
1/2 teaspoon garlic powder
2 teaspoons prepared mustard
1 tablespoon vegetable oil
3 1/2 slices bread, cubed
1/3 cup milk
1 (8 ounce) can tomato sauce
4 carrots, cut into 1 inch pieces
4 potatoes, cubed
1 cooking spray

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl combine vegetarian ground beef, vegetarian ground beef crumbles, onion, eggs, Worcestershire sauce, salt, pepper, sage, garlic powder, mustard, oil, bread cubes and milk. Transfer to a 9 x 13 inch baking dish and form into a loaf. Pour tomato sauce on top.
Place carrots and potatoes around loaf and spray vegetables with cooking spray.
Bake 30 to 45 minutes; turn vegetables. Bake another 30 to 45 minutes. Let stand 15 minutes before slicing.

This serves 10

If you don't eat eggs, some vegetarian do, then leave it out. It taste the same without it. OK

you can not make a MEAT loaf out of veggies.
why do vegans try so hard to imitate the meat that they hate. if you want to eat rabbit food then just eat rabbit food. quit trying to make it look and taste like meat.
