Poodle is the other, other white meat. It should be braised as this breed is hyperactive and the meat can be tough. French poodle meat is tender, however and can be lightly sauteed and served with a chilled chenin blanc or a Dogfish Ipa.

It's mostly dark, though there are some tasty white bits above the paws and behind the haunches.

Ground poodle patties on the grill with a cold Heineken - doesn;t get much better than that.
