One of the pitfalls of becoming a vegetarian is that most people just stop eating meat and think it's ok. When you do this, you need to replace the protien that you're losing by not eating meat. This soup is one I like to serve because of the black beans, which are a good protien replacement.
You can do it without the craime freche if you're a vegan.
1 c Onion -- Chopped, 1 Large
4 ea Clove Garlic -- Finely Chopped
2 T Vegetable Oil
1 lb Black Beans -- Dried
6 c Chicken Broth
2 T Red Chiles -- Ground
2 T Cilantro -- Fresh, Snipped
1 T Oregano Leaves -- Dried
2 t Cumin -- Ground
28 oz Whole Tomatoes -- Undrained
1 ea Chipotle Chile -- *
-----QUICK CREME FRAICHE-----
1/3 c Whipping Cream
2/3 c Dairy Sour Cream
-----GARNISHES-----
1 x Red Bell Pepper -- Chopped
* Chipotle Chile should be one that has been canned in Adobo Sauce.

Cook and stir onion and garlic in oil in 4-quart Dutch oven until onion is
tender. Stir in remaining ingredients except Quick Creme Fraiche and Bell
pepper; heat to boiling. Boil 2 minutes; reduce heat. Cover and simmer
until beans are tender, about 2 1/2 hours. Pour 1/4 of the soup into food
processor workbowl fitted with steel blade or into blender container,
cover and process until smooth. Repeat with remaining soup. Serve with
Quick Creme Fraiche and Bell Pepper.
QUICK CREME FRAICHE:
Gradually stir whipping cream into sour cream. Cover and refrigerate up
to 48 hours.

Black Bean and Corn Soup
2 cans Black Beans
2 cans Corn (or one large bag of frozen)
2 cans Diced Tomatoes
1 can Mexican Stewed Tomatoes
3 Green onions chopped
1 tsp. Cumin
1/2 tsp. Chili Powder
Cook in a slow cooker on low for 2 hours or on your stove in a pot on low heat . Serve with crackers or tortilla chips.

This is one of my favorite soup recipes and it is very forgiving. I have always used a bit of chopped red onion instead of splurging on the expensive shallots and I never seem to have fresh thyme on hand so I have always used the dried kind. Also, let the half n' half not scare you :) To cut down on the fat grams, you can use fat free half n' half w/o compromising the taste!!
CREAM OF RED BELL PEPPER SOUP
2 1/2 pounds red bell peppers
1 tablespoon olive oil
1 cup chopped shallots
2 garlic cloves, minced
1 tablespoon chopped fresh thyme
3 cups (or more) canned vegetable broth
1/2 cup half and half
2 teaspoons red wine vinegar
1/8 teaspoon cayenne pepper
Sliced fresh basil
Char peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag and let stand 10 minutes. Peel, seed and slice peppers. Heat oil in heavy large saucepan over medium heat. Add shallots, garlic and thyme and sauté 3 minutes. Add 3 cups broth and all but 4 slices of roasted pepper. Simmer uncovered until peppers are very soft, about 20 minutes.
Working in batches, purée soup in blender until smooth. Return to same pot. Add half and half, vinegar and cayenne pepper. Rewarm soup, thinning with additional broth, if desired. Season to taste with salt and pepper. Ladle soup into bowls. Garnish with reserved pepper strips and basil.
