Tabouli... also spelled tabbouleh...
Bulgur wheat, roma tomatoes, green onions, green olives, olive oil, parsley, lemon juice, and tabasco sauce (optional).

Boil the bulgur wheat just like rice, pretty much to the ratio of one cup wheat and one to two cups water (the less water you use, the firmer it will be in the end. I like to make a lot at a time, but the ratio stays the same - three cups bulgur wheat, five or six cups water). Mix in a tablespoon of olive oil. Dice a firm tomato, chop the green onions, olives, and parsley. Mix the vegetables into the wheat. You should have about one piece of each in each spoonful - each spoonful will have a bit of tomato, a bit of olive, etcettera... Sprinkle some lemon juice in, not a lot. If you are adventerous, you can add some tabasco sauce to your serving, but I wouldn't recommend adding it to the full mixture.

You will probably have to ask your grocer to help finding the bulgur wheat, it might be near the rice or in the ethnic section. Most health food stores sell it in their bulk bins... In a pinch, you could substitute brown rice, but it won't have the same taste.

This is the recipe I learned, but there are near infinite varieties.

I'm part Lebanese, so yeah, I cook Arabic food.

Hummus and pita is always a sure bet.
Kibbi is also very popular.
Schawrama and falafel are popular sandwiches.
Just google it.
here's an easy recipe:

Bazelah (green peas in arabic)
Chop one medium onion
put in oil and fry
when brown add ground beef,
salt it
pepper, sweet pepper, all spice, etc
once that gets brown(i prefer until it gets really brown!), add in some frozen peas, and carrots, but definately more peas than carrots
(chopped carrots)
add chopped potato if its small and you like
get mixed in until thaws
add tomato paste or sauce
add water to make semi soupy
cook until carrots and potatoes become tender
and FRESH cliantro, chopped finely
and salt to taste
serve with rice or pita.
