True Vietnamese cooking is based on what was available to the poor during the formation of it's culture since there were few wealthy people for a very long time in that country. Vietnamese cooking in America is semi-bastardized just like Mexican and Chinese.

Lots of seafood and VERY VERY VERY heavily peppered. It puts "hot" mexican food to shame.
