So I do chocolate tasting for a chocolate company. What can I say, I love talking (and eating) fine chocolate.
My experience is that it is best to offer a mixture of chocolates. If you have to make a choice, skip the white chocolates.
It is probably more important to focus on high quality chocolate than which type of chocolate. At tastings people often tell me they don't like dark chocolate because it tends to have a bite. Then they taste a gourmet dark chocolate and are amazed at the flavor, smoothness, and lack of bitterness.
If you are using fine chocolates, then I would offer an extra dark chocolate, 2 middle range dark chocolates, and one milk chocolate. I do this combination at tastings all the time and they are very popular.

If you live in California, go buy a bunch of chocolate truffles from See's Candies. Absolutely the creamiest hit of sweet, dark chocolate to be found on this earth.
