The main thing about growing lemon grass is to grow them under full sun and not to overwater it. Try growing it in soil added with some sand.
Abit of fertilizer does make alot of difference in making the stem grow all thicker n fuller.
Im living in the tropics and lemon grass thrives everywhere here like... grass ... its on the road sides, by the car porch etc. It grows into a huge leafy bush and often needs leaf trimming to keep it neat.
Its really hardy but still the rule of thumb - we plant it in FULL sun even considering the sweltering heat here it never wilts.

Tried on my balcony last year in the DC area. It got just a couple of hours of full sun a day. The lemon grass wasn't happy.
It grows like a weed near my wife's house in Thailand. Terrible dry soil but it doesn't seem to mind. Apparently lots of sun is all it takes.

I have 4 1gal pots of it that I bought earlier this summer as 2"pots; they have done great. I had no idea what to expect & have no clue how to use them! I got them for their mosquito repelling properties but would like to use then in cooking as well. Any suggestions?

I used to grow them when I was a teenager in Texas. Dont really have any tips except make sure you water them.
