Due to the harmful bacteria found in freshwater fish you should not be eating it Raw. However I've heard of methods for cooking fish by using Lime Juice, that may be more along the lines of what you are looking for. Just make sure you completely research it first.

If you are going to just cook the fish normally, I would say try marinating the fish in miso paste and sake. That will infuse a nice flavor into the fish . Grill the fish for extra flavor. Then use veggies like cucumber, carrots and red cabbage as the filler.

Those types of fish are not meant to be eaten raw. They are full of bad bacteria that will make you sick. You could always cook the fish and use it as you would raw fish in sushi. Than just about any sushi recipe would do.
