Is there anyone out there that knows a good recipe for saltfish green banana & yam? Or can you point me in the direction of a decent West Indian cookbook?

Get green bananas (one's that are not ready to ripen yet). Cut off top and bottom of each about 1 inch. Slice the length of bananas on the outer curve, place in pot and boil until cooked.

Get saltfish boil in pot until it curls. Scrape any excess skin etc from saltfish. Slice tomatoes, onions, flavor pepper, chives celers, sweet peppers and garlic. Place pot to hot, add little oilve oil, when oil is hot put garlic in oil and simmer for 5 seconds, then add sweet peppers etc (everything except saltfish) and stir for about 3 mins then add saltfish. Cook for 3 mins or less.

When grren bananas is throughly boiled, strain and cool. After cooling, proceed to peel banana skin and place in dish. Add saltfish buljol on top of bananas and voille! Hope you enjoy it!
