Buy a splash gaurd. It's a fine wire mesh round flat utensil that when placed over the top of your frying pan eliminates grease from splattering all over your stove top. You can find them at pretty much any kitchen specialty store and I've even seem them in major grocery stores as well.

You can try using a pot instead of a frying pan and use a long fork ( like you would use for bbq) but chances are you will still get a little drop here or there. The pot should work though. A big one so that you only have to fill it half way. That way when the grease pops up it will hit the pot instead of the wall.

First, make sure the oil is not too hot. The oil should be on Medium heat, not High. Second, the best way to cook fried chicken is with semi-frozen meat. When the meat is completely defrosted and dripping, the drips will make the oil spatter, as will any other liquid added to the oil. To see this for yourself, next time you have a pot of heated oil...put a tiny drop of water in the oil and watch what happens. When you put the meat in, put each piece on a large slotted spoon and lower it into the oil, don't drop it in with your hands. And you can also just use a tall boiling pot...you know, the kind you use for Pasta...keep the oil level low in the pot, and that way the spatters stay in. Happy Cooking!
