When I was in Paris I was only a partial vegetarian and still had trouble finding stuff to eat. All of the non-meat dishes were either fish or loaded with dairy. But now that I don't eat fish I don't know what I would eat if I went there again.
My only advice would be to try out some ethnic restraunts like Indian or Vietnamese, they tend to have more vegan options than the traditional French cuisine.

I am vegan, and had a terrible time finding vegan-friendly food while I was there. I found a fresh fruit market and just kind of lived off that for a week.
