Key is Spices. It makes a vegetarian dish no matter what ingredients you use. So get either fresh or dried(costo has them for cheap)
Basil
Cilantro
Pasrley
Red pepper flakes
Black pepper
Italian seasoning mix

Soy sauce(if you like it)
Horseradish(if you like it)
Then Have:

Fresh Bread

Vegetable bullion (sp?). You can make soup, sauces, curry, and almost anything with it. You can make a vegetarian noodle soup and it's actually more healthy than chicken soup since there is virtually no fat. I tried this since I'm dating a vegetarian and it's been a wonderful addition to my kitchen.

Always keep beans, rice, noodles, and canned veggies around. They are godsends when you are out of food and your first impulse is to go to a fast food place. Keeping boxes of cereal around is good too.
