I've not heard of a boiled egg, but a raw egg is needed to bind it together. The egg cooks while the meat cooks.

This kind of binding is also needed for any kind of lean meat made into burgers: like moose meat.

Mmmm, nothing like a moose-burger bound with a nice egg . . .

Legend has it that Maid Personiphia (St.George's 2nd wife) was making a meatloaf, and an egg fell from the bottom of a passing dove. It being a very hot day for England (it was over 45 degrees), the egg cooked during its descent and fell into the lovely loaf. St.George so enjoyed it, he beseeched his maiden to make another (but this time without the shell), and thus a culinary delight was born! Huraah!

I don't' know but my mom is Russian and she does that. It helps keep the meatloaf moist she says.
