It's good to do a pasta bar style set up at the table. I cook a particular type of pasta. Then I heat one or two types of sauces. I will have several bowls of "toppings" for the pasta: cooked chicken pieces, cooked shrimp, diced tomatoes, spinach, mixed vegetables (like broccoli, cauliflower, carrots) and perhaps shredded cheese. Then I'll also have a tossed salad and some garlic bread. Vegeterians and non-vetagarians alike just get their steaming plate of pasta and top it however they like. (We have a rule at the table at our house that you do not make comments about what's on another person's plate -- because obviously that's how they like it. So we don't have veggies insulting meat eaters or vica versa. It helps keep the peace.) I also have found that the whole family loves zucchini lasagna and no one misses the meat. Sometimes, especially in summer, we will just do a giant fruit platter for dinner with sherbert or yogurt as a centerpiece in each. Or we might do grilled veggie kabobs. Meat eaters can have meat, too, but the vegetarians can fill up on the kabobs.

VEGETARIAN NACHOS
1 bag Nacho Cheese Doritos
1 cup shredded Colby cheese
1 jar Pace Picante Sauce (chunky)
1 jar jalepenos
2 tbs. sour cream
1 small can black olives
Take about 20-25 chips and place onto a microwavable safe plate.
Spread 1 cup Colby cheese onto the Doritos. Do not add sour cream until after heated. Heat in the microwave for 30 seconds to 1 minute (depending on microwave).
Spread Pace Picante sauce on top of the melted cheese and Doritos. Garnish with 2 heaping tablespoons of sour cream, black olives, and jalepenos.
Serve. Enjoy this fast and easy dish. It's a great meal at a cheap price for larger families. The kids will love it. Add lettuce or any other variety of ingredients to your liking.
If you want meat, just add it on top.

Veggie Lasagna? That is vegetarian, but not vegan. It's really good, though!
portobello mushrooms
zucchini
yellow squash
onion
spinach
garlic
olive oil
tomato sauce
lasagna noodles
ricotta cheese
shredded mozzerella
Fry mushrooms, onion,garlic, zucchini and squash in olive oil.
Mix 1/2 cup of mozzarella with ricotta cheese. Layer accordingly, adding spinach (don't cook spinach first becasue it will add moisture).
Bake 350 for 30 min to an hour.

Home-made Mac & Cheese. I recommend "Chuck's Favorite Mac & Cheese" from allrecipes.com. It's always a hit with the vegetarians AND the meat eaters in my life. You won't have to add anything. :o)
Or, Broccoli Alfredo. Add grilled chicken for the carnivors.
Or, Pizza. Veggies on half, meat on the other.
Then of course there's hamburgers; meat for them, veggie burger for you.

There are many faux meats on the market that you can use. Your family wont know the difference. Use boca or morningstar farms crumbles to replace ground beef in anything that calls for beef..

If you eat dairy, then stuffed shells smothered in sauce and cheese. Morningstar Farms breakfast link sausage can be sprinkle in there (It's very sausage like). Big salad, loaf of bread or two. Wine. Side of green beans with mustard vinegrette.

I make chili with TVP rather than hamburger and noone can tell the difference. Spagetti can be made that way too. Any recipe that calls for hamburger, TVP make a good substitute.
