Microwave Brownies

1/2 cup unsalted butter
3 ounces unsweetened chocolate
2 large eggs
1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chunks or semi-sweet chocolate chips
nonstick cooking spray

Put the butter and chocolate into a microwave safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds to melt the chocolate. Set aside.
In another bowl, whisk together the eggs and sugar.
In a large bowl sift the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine.
Spray an 8 by 8 by-2-inch microwave safe glass pan with cooking spray. Pour the batter into the pan, spread it out evenly, and scatter the chocolate chunks on top. Cook on high for 5 minutes. Remove from the oven and let rest for 3 minutes before cutting and eating.

I, personally, wouldn't take a "box" mix that requires oven cooking and put them in the microwave..but here's a microwave brownie mix that you can try in the future.

MICROWAVE BROWNIES

1 c. sugar
2 eggs
1/2 tsp. salt
1 c. chopped nuts (any kind)
1 tsp. vanilla or lemon flavoring
1/2 c. cocoa
1/2 c. butter Crisco or butter
3/4 c. all-purpose flour

In mixing bowl beat together the eggs, sugar, flavoring and salt for one minute at medium speed or until very light. Add melted butter Crisco (or butter) beating well. Mix in flour and cocoa at low speed. Stir in nuts, spread evenly in 8 or 9 inch square pan or glass dish, well-greased.

Microwave on high 6 to 7 minutes (if not using rotary, rotate dish half turn every 2 minutes). When done, top will look dry and spring back when touched. Cool before cutting. About 20 brownies.

I've cooked cake in the microwave before. Just keep an eye on it, that's all I do.

No. You'll just make a horribly dried out hunk of charcoal.

....I speak from experience.
