Fortune Cookie Recipe
Fortune cookies can be tricky to make - it's important to make sure that the cookie batter is spread out evenly on the baking sheet. Instead of using the back of a wooden spoon to spread the batter, it's better to gently tilt the baking sheet back and forth as needed. Wearing cotton gloves makes it easier to handle and shape the hot cookies. This fortune cookie recipe makes about 10 cookies.
INGREDIENTS:
2 large egg whites
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
3 tablespoons vegetable oil
8 tablespoons all-purpose flour
1 1/2 teaspoons cornstarch
1/4 teaspoon salt
8 tablespoons granulated sugar
3 teaspoons water
PREPARATION:
1. Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide. Preheat oven to 300 degrees Fahrenheit. Grease 2 9-X-13 inch baking sheets.
2. In a medium bowl, lightly beat the egg white, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.
3. Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.
4. Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.
5. Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.
6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).
7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

You didn't ask for recipes! So, I'm reporting those people who submitted them. Such people muddy the waters, cloud the issues, and give the Tongs a bad reputation.
The "fortunes" in fortune cookies often don't make much sense because they are actually alphabetic representations of a numeric code. The local numbers dealer inserts the "fortune" through a trap door in the cookie after each horse race at the local track has been run. The door is then sealed with super glue so that nobody can change the message.
That way, he or she already knows the winning number combination and can be assured that people who bet the numbers found in their cookies will lose.
That's how the confection got its name. Those in the numbers racket make a fortune from the bets made on the basis of the contents of the cookies.

the cookie is cooked, and comes out soft. the fortune is inserted, and then the cookie is folded around the shell. then the cookie is dried and it becomes hard.

Some fortune cookie recipes for you:
Confucius Crunch
Ingredients
2 tablespoons butter (no substitution)
1/4 cup confectioners sugar
1 large egg white
1 teaspoon vanilla extract
pinch salt
1/4 cup all-purpose flour
14 strips paper (3 by 1/2" each) with fortunes
Directions
1. Preheat oven to 375F. Grease 2 small cookie sheets.
2. In 1-quart saucepan, heat butter over low heat until melted. Remove saucepan from heat. With wire whisk, beat in confectioners sugar, egg white, vanilla, and salt until blended. Beat in batter until batter is smooth.
3. Drop 1 heaping teaspoon batter on to cookie sheet. Repeat with another teaspoon batter, at least 4 inches away from first. With small metal spatula or back of spoon, spread batter evenly to form two 3-inch rounds.
4. Bake about 4 minutes or until cookies are lightly golden. Loosen both cookies with metal spatula. Working with 1 cookie at a time, place a fortune across center of hot cooke. Fold hot cookie in half, forming a semi-circle, and press edges together(a). Quickly fold semicircle over edge of small bowl to create fortune-cookie shape(b). Repeat with other cookie. Let shaped cookies cool completely on wire rack.
5. Repeat with remaining batter and strips of fortune paper to make 14 cookies in all, cooling cookie sheets in between batches, and regreasing sheets as necessary. Store cookies in container up to 2 weeks. Makes about 14 cookies.
San Francisco Fortune Cookies
Ingredients
1 large egg
1/4 cup sugar
2 Tbsp. vegetable oil
1/4 cup cornstarch
1 to 2 Tbsp. of water
Directions
Beat egg slightly. Add sugar and beat until very thick and smooth. Add oil to mixture. Add water and a little of the egg mixture to the cornstarch and stir until smooth: beat into egg mixture. Heat griddle to about 30F. Drop a heaping teaspoonful of batter into the griddle. Then spread with a spoon into a cookie about 3 inches in diameter and about 1/ inches think. Turn over to brown underside. Cook until cookies are light golden in color and lifts easily from the pan. Remove cookies one at a time from the griddle. Place a fortune paper in the center of the cookie and fold the cookie in half, pinching the edges together and folding down.
Blue Ribbon Recipe
Ingredients
1 egg
1/3 cup sugar
2 tbsp. corn oil
2 tbsp. water
1/4 cup cornstarch
Directions
Have fortunes prepared in advance. Beat egg on low speed until frothy.
Beat in sugar, a little at a time, and continue beating until mixture is a very light yellow and thick. Fold in corn oil. Blend water and a little of the egg mixture into cornstarch, then stir into the remaining egg mix.
Heat heavy, well seasoned griddle to 350 deg. or until drops of water bounce when dropped on the griddle. ( For griddles without temperature control, keep heat between low and medium). Drop heaping tb. of batterr on the griddle and spread with the back of a spoon to about 4 in. wide and 1/8 in. think. Cook until edges are slightly brown and cookies can be easily lifted from griddle with a spatula. 5-8 minutes. ( If cookies carefully and cook other side until light brown. Be careful to keep temperature even. Place fortune paper on cooke as soon as it is removed from the griddle.
Folding is easier to do than to describe, but the end result is shaped like a horseshoe. Fold opposite edges together, forming a semicircle.
Crease crosswise a the cent of the straight edge to form a flattened side. then bend the opposing corners together for the traditional shape.
Set in a small glass or muffin tin until cookie cools and holds its shape. Wipe griddle and stir batter. Repeat.
My Mom's Best Fortune Cookie Recipes
Ingredients
1 cup flour
2 tbsp. cornstarch
1/2 cup sugar
pinch salt
1/3 cup oil
3 egg whites
1/2 tsp. vanilla or 2 to 3 drops of almond extract
3 tbsp. water
butter for cookie sheet
Directions
Combine dry ingredients in a large bowl. add liquid ingredients and stir until the batter is smooth.
Heat oven to 300 degrees. Line a cookie sheet with foil; butter foil, or spray with non-stick vegetable coating. Drop level teaspoons ( no more) of batter onto the cooke sheet, no more than6 to a sheet. Spread evenly to 4-inch diameter.
Set cookie sheet in the oven; bake for 15 to 20 minutes or until the cookies begin to brown lightly. Remove from the oven and immediately remove 1 cookie with a broad spatula. Place a fortune in the center, fold in half and press back against ledge of counter or muffin pan to form fortune cookie shape. Set cookies in muffin tin to keep their shape until cool.
Continue with the rest of the cookies without delay, as they harden fairly rapidly. If the cookies become too brittle to fold, return to oven for 2 or 3 minutes and try again. Repeat process with remaining batter.
Note: You can change the color of the cookies by adding a drop of food coloring with the liquid ingredients. also, it is easier to handle hot cookies if you wear white cotton gloves.
To make fortunes: Print or type fortunes on large sheet of paper, then cut them into 3/4 inch strips no more than 3 1/2 inches wide. Use ink that won't run if the paper gets a little oily.
Favorite Fun Fortune Cookie Recipe
Ingredients
3 tbsp. light brown sugar
1/4 cup regular sugar
2 large egg whites
2 tbsp. canola oil
1/4 tsp. pure vanilla extract
1/3 cup + 1 tbsp. flour
Non-stick vegetable oil spray
24 paper fortune strips ( 2 1/4 X 1/2") with fortunes
Directions
1. In medium bowl, press brown sugar with back of spoon to remove lumps. add regular sugar, egg whites, oil, vanilla and almond extracts and whisk till blended. Stir in flour and whisk till smooth. Let batter stand for 20 minutes.
2. Meanwhile, preheat oven to 350 degrees. Lightly coat baking sheet with nonstick spray. spoon 1 tablespoon of batter onto prepared baking sheet. With back of spoon, spread batter to 3-inch circle with even thickness. repeat 3 more times. Place a muffin pan nearby.
3. Bake in oven until golden around edges, about 5 minutes. Coat spatula with non stick spray and loosen cookies immediately from the sheet. remove 1 cookie to work surface. ( Return remaining cookies on baking sheet to oven with door open to keep them soft.) flip 1 cookie over, lay fortune paper in center, and fold cookie in half over fortune. fold cookie in half again, bending on straight side, to form traditional fortune cookie shape. Place in muffin pan to hold shape and cool. Repeat with remaining cookies.
4. Cool baking sheet, wipe clean, and coat with cooking spray. Repeat with remaining batter and fortune papers. Store cooled cookies in airtight container at room temperature for up to one week.
