I recently went on a holiday to the Philippines and I got really addicted to those fishballs that street vendors sell. I am craving them now and I haven't found anyone selling similar items here in Sydney, Australia. They are mostly flour/starch based and there's not much fish in them at all. Does anyone have the recipe for how to make these scrumptious snacks? Thanks :)

2 lb fish fillets
2 eggs
1 ts ginger juice
1/2 ts salt
1 ds pepper
1 ts cornstarch
1 tb sherry

Instructions

1. Mince or grind fish.

2. Beat eggs; extract ginger juice. Add to fish along with salt, pepper and cornstarch, and sherry. Blend well.

3. Wet palms and make into balls and deep fry

HERE IS A RECIPE CLOSE TO THE STREET ONES



GHETTO FISH BALLS
2 C. cooked flaked fish

1/2 t. salt

1/2 t. soul food seasoning

1 T. fresh lemon juice

1 C. thick cream sauce

2 T. fresh chopped parsley

3/4 C. panko crumbs

1/2 C. almonds chopped

Mix together fish, salt, soul food seasoning,lemon juice, cream sauce and parsley. Chill Shape into balls. Roll into to a mixture of the almonds and panko.

Fry at 375°F. in a deep fat fryer. Drain on a paper towel.

Serve with dipping sauce or a tartar sauce.

Substitutions:

3/4 lb. shrimp for the fish

Mince raw shrimp in your food processor. Proceed with recipe above.

Note: Panko is Japanese bread crumbs. I buy it at the Chinese grocery store.

FISHBALL RECIPE:
: Ingredients: 1 tbsp. baking powder
: 3 tbsp. cornstarch
: 1 tbsp. salt
: 1 kilo fish fillet (your choice of fish)


1. Wash fish fillet & drain in sieve or colander.
2. Chop fish fillet finely or put in chopper/blender. **optional***place ice if u want it to stick together
while mixing, but drain
3. mix with 1 tbsp. salt, add 1 tbsp baking powder & 3 tbsp constarch
4. mix well so it will roll nicely into balls.
5.take 1 tbsp fishball mixture & roll it into the plalm of your hands until you form a lovely nice ball.
repeat. you can make 100 fishballs with this mixture.
6. set fishballs aside. Boil water in a saucepan.
7. drop fishballs into the boiling water.
8. cooked fishballs float when they are done. collect the floaters to drain on sieve or colander.
9. set aside some for frying. store in fridge or freezer the others.
10. Deep fry & enjoy! they dont need to brown since they are already cooked. pierce fishballs in wooden/bamboo skewers if u like! Dip in sauce.

**SWEET dipping sauce for Fishball:
soysauce
water
sugar
grated fresh garlic
and flour to thicken
chili *optional
Basically you boil it on low heat until it thickens i dont have approx measurements but its like
making gravy or lumpia sauce. u just add more or less sugar to taste:

or try this:
4 tablespoons cornstarch
1/3 cup brown or white sugar
1/4 cup soy sauce
1-1/2 cups water
minced garlic
chili *optional

Combine cornstarch, sugar, soy sauce and water. Cook 5 minutes over low heat, stirring
constantly to prevent lumps. add chilies to spice it


***Sour Vinegar-based Sauce version***
Just combine all:
1/2 cup vinegar
soy sauce
onion chopped
garlic minced
chilies to taste
enjoy all!

Fish Balls

1 cup cooked, shredded fish
1 egg
2 cups cold or hot mashed potatoes
pepper to taste

Beat well together and shape and fry
You can add chopped onion and parsley if you wish

FISH BALLS

3 tbsp. all-purpose flour
1 tsp. salt
1/8 tsp. paprika
3 tbsp. vegetable oil
1/2 c. milk
1/2 tsp. Worcestershire sauce
2 tsp. grated onion
2 c. cooked, flaked whitefish, i.e. frozen haddock
1 egg
Dry seasoned bread crumbs, fine

Mix 3 tablespoons flour, salt and paprika in a small saucepan. Stir in oil. Add milk; mix well with wire whisk. Cook over low heat, stirring constantly until thick and smooth. Remove from heat. Stir in Worcestershire sauce, onion and fish. Refrigerate until well chilled (about 1 hour). Add 1/2 cup to 1 cup of bread crumbs until mixture holds together well. Shape into balls. Beat egg with 2 tablespoons water. Dip fish balls into egg then roll in bread crumbs. Cook in deep fat at 350 degrees until well browned. Drain on paper towels. Skewer with toothpicks. Serve with cocktail sauce.

PERFECT FISH BALLS

3 med.-sized potatoes
1 c. flaked codfish, cooked
1 tbsp. butter
Pepper to season
1 egg

Peel and cut up potatoes and cook until tender - drain and mash very thoroughly, add butter, pepper and egg and beat until light and fluffy. Dorp by tablespoon into deep hot fat (375-390 degrees) and fry golden brown. (Dipping spoon into oil keeps mixture from sticking to spoon). Drain and serve. Serves 4.

once friend of mine gave me some fish ball, ready to eat or cook, home made from sydney, bought around china town. love it too..
