Not exactly, this sounds like you've gotten a steak at the grocery store and its begun to oxidize in your refrigerator. The key here is your nose, if the beef smells sour, it is, the color might be unsightly, but it SHOULD be ok to eat.... the exception being frozen meat which might be freezer burned, I would defrost that as quickly as possible and cook at least to medium (warm pink center). As far as ground beef, you REALLY need to be careful with oxidized ground beef as it typically has a greater risk of being contaminated than a whole piece of meat, and is handled more. I hope that this helps and the old saying is: When in doubt.... throw it out!!

To explain, it has begun to spoil but at this point is still safe to eat. As with all meat, it is always better to cook well, although some people like their meat a little pink.

Meat starts to discolor once it hits open air but is still safe.
I have cooked hamburger that is grey all they way through and not gotten sick.

Smell it and if it smells spoiled, best not to take a chance but if most is red, it should be ok.

Rule of tumb don't leave ice box foods out no longer then 30 mins..after that germs start to take over
