It depends on the methodology and the particular program.

Some focus on identifying the source of the anger and teaching people how to deal with those situations so they don't get angry.

Some teach techniques for channeling and deflecting anger, dispersing it or turning into productive activities. That way, people don't take out their anger on others through violence or outbursts.

Some of the techniques involve reframing, where people are taught to look at or think of situations differently. Or to make distinctions, like being made at what someone else does but not being mad at the other person as a person. This can be applicable to any model, because it can be used to prevent getting angry in the first place, or to direct the anger in a more appropriate manner.

Some practice primal scream therapy, where they teach people to release anger vocally in controlled settings. This provides a coping method if they cannot otherwise vent or regulate the emotional energy itself.

It all depends on the approach. The best programs offer many of the above skills, and treat each person's situation as unique so that the skills taught are the ones appropriate given the client's unique situation.

Anger management classes teach you how to identify the anger, figure out why you are angry, deal with the anger, and ultimately control the anger.
