Put a large frying pan on the stove...add some light oil or a little butter. Toss in a flour tortilla. On top of the tortilla, put shredded chicken and shredded cheddar or Mexican cheese. Add another tortilla on top of that. When they have melted together, flip it over to the other side for a minute. Take it out, cut it in fourths with a pizza cutter, add sour cream and salsa on the side. Enjoy with your favorite beverage!

I have decided yet. It's only 10:30 am. Here's a great dish!
MEXICAN CHICKEN CASSEROLE
1 chicken, cooked and cut in pieces (or 1 lb. ground beef)
1 med. pkg. tortilla chips
1/4 c. onion
1/4 c. chopped green pepper
Chili powder to taste (1 tsp.)
Garlic powder to taste (1/2 tsp.)
2 cans cream of chicken soup
1 can cream of mushroom soup
1 can Old El Paso tomatoes and green chilies (10 oz.)
1 sm. pkg. Cheddar cheese
In 9x13 pan place tortilla chips. Place meat over chips. Mix soups, can of tomatoes with green chilies, with chili powder, garlic, onion, and green peppers and pour over meat. Grate Cheddar cheese and sprinkle on top.
Bake at 350 degree for 1 hour. Can be prepared ahead of time and refrigerate until ready to bake. Serves 6-8.

Last night I had chappathis, chicken curry, rice and sambar. Tonight, I am not sure - I might have an early dinner (say 5 O'clock?) of veg sandwich. masala and egg toast and some fruit juice.

i had tuna noodle casserole, but taquitos or flautas depending on what part of mexico or latin america your in are easy, just roll what ever kind of shredded meat in a corn tortilla and fry it, and serve with guacamole....I some times even use corned beef..
