I'm pretty sure they've probably been handed down generation to generation... chitlins, greens, ribs... Same as the recipes my family has handed down to me that I learned by watching and helping in the kitchen.

good luck with the slavery recipies... slaves weren't permitted to read or write. try your local library for the others.
