Some recipes call for the use of a 5-6 quart slow-cooker. We are a family of TWO, therefore looking to get a smaller crock-pot, maybe a 3.5 quart. Can we still use the recipes for the larger slow cookers?

Just make sure you have room for all the ingredients! I think slow cooker recipes are pretty forgiving. Unless you are adjusting the amount of ingredients you use, just keep the cooking times the same. If you are halving the recipe, I would reduce cooking time by 30" to an hour (in general)

If you're asking can you use the recipes for a 5-6 qt slow cooker in a smaller 3.5 size, of course....just adjust the recipe so you don't have boil over....
