Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

Pasta Caprese with Raw Tomatoes, Basil and Mozzarella

1 1/2 lb. fresh, ripe tomatoes, coarsely chopped
8 oz. fresh mozzarella cheese cut into 1/2 inch cubes
4 T. extra virgin olive oil, the best you can get
1 tsp. red wine vinegar
1/2 c. fresh basil leaves, washed, dried and shredded
salt and freshly ground black pepper
1 lb. pasta, preferably penne (spaghetti will do)
1 - 2 cloves garlic (optional), chopped fine
a bit of hot pepperocini (opt.)

Start the dish an hour or so before your meal. Using a wooden spoon, mix the mozzarella, tomatoes, oil and vinegar (optional garlic and/or hot pepper) in a deep bowl. Season to taste with salt and freshly ground black pepper. Cover with a clean dishcloth and let it sit at room temperature for an hour or so. Add the basil and toss well.

Cook the pasta; remove when al dente, with a bite to it. Drain the pasta and return to the warm pasta pot. Pour on the tomato mixture and toss. Check again for seasoning. Place in serving bowl and serve.



Cornbread Mexicana

Ingredients:

1 1/2 cups flour
2 1/2 cups cornmeal
5 teaspoons baking powder
1 1/2 teaspoons salt
4 tablespoons sugar
1 tablespoon cumin
1 teaspoon chili powder
1 can whole kernel corn (15 ounce), drained
1 can green chiles (4.5 ounce), diced
2 eggs, beaten
2 cups milk
1 stick butter, melted, (1/2 cup)
1 cup grated cheddar cheese

Preparation:

Preheat your oven to 425°F.

Add all of the dry ingredients to a large mixing bowl and incorporate. Add drained corn and green chilies. Add eggs, milk, melted butter, and cheddar cheese.

Mix well. Pour into a 13 X 9 pan (1/4 sheet), or muffin pans that have been sprayed with cooking spray. Bake for 20 minutes or until golden brown. Freezes well.

This is a really good and ez dessert from a southern belle friend ,Lori.
Dip store bought chocolate cookies in milk,just for a couple of seconds.Put a layer of cookies on the bottom of a glass pie pan.spread a layer of cool whip on top,repeat with another layer of milk dipped cookies and top with more cool whip.Refigarate for 1 hour and when ready to serve,drizzle with hot fudge sauce.Crumble some dry cookies on top and enjoy.

STUFFED PEPPERS

6 LARGE GREEN PEPPERS
1½ # OF GROUND BEEF
SALT TO TASTE
PEPPER TO TASTE
1 CLOVE OF CHOPPED GARLIC FRESH IS BETTER THAN POWDER
1 CUP OF COOKED RICE PUT EXTRA WATER IN DRAIN AND SAVE WATER
1 VERY LARGE CAN OF CAMPBELL'S TOMATO SOUP

CUT OFF A THIN LAYER FROM THE TOP OF THE PEPERS AND REMOVE SEEDS.

MIX GROUND BEEF WITH SALT, PEPPER, RICE GARLIC AND 2 TABLESPOONS OF TOMATO SOUP. ADD SOME RICE WATER TILL VERY MOIST.

STUFF PEPPERS WITH MEAT MIXTURE AND MOUND. PLACE IN A ROASTER SPRAYED WITH PAM. . MIX TOMATO SOUP WITH 1/2 CAN OF WATER. POUR OVER STUFFED PEPPERS. BAKE FOR 1-½ HOURS AT 350º.
