I've been trying to bake lemon tarts, and every time I make one, the lemon/custard stuff part always cracks. How can I avoid that? And does anybody know why it does that?

Try putting a pan full of warm water on the lowest rack in your oven, under the tart while it bakes. This will allow for steam which will make the tart more moist and less likely to crack. The cracking is do to the tart being to dry. I bake cheese cakes this way and it works great!

Smoke it in a different room. Then, go to the kitchen and make your tarts. If you do both at the same time that tends to be a problem.

You have to talk to your tarts before baking them. Let them know how you want them to turn out. it is that simple.

Let it cool in the oven with the door open.

try turning it half way through the cooking process and also do try cooling it in the oven with the door open.
