my mom decided to plant some zucchini this year and they are GIGANTIC! theres 6 of them ripened so far and they are each about a foot and a half long and just over a foot around the widest point(I measured). Please help because the only recipe we have is zucchini bread and we have to use them before they rot! thanks in advance!!!

Give some to a soup kitchen or a homeless shelter, that's the best recipe> But that crap is good in brownies and bread and I just microwave it and put butter on it. YUMMY

I've grown zucchini like that before lol I know you said you have made bread but just thought I would pass on this recipe if you want to try it as well - its my own recipe and took First Prize at our City fair

Zucchini Bread Or Muffins

3 Cups Zucchini -- shredded
1 1/3 Cups Sugar
1/2 Cup Vegetable Oil
2 Teaspoons Vanilla
4 large eggs
3 Cups Flour -- All-Purpose
1 1/2 Teaspoons Cinnamon
2 Teaspoons Baking Soda
1 Teaspoon Salt
1/2 Teaspoon Cloves
1/2 Teaspoon Baking Powder
1 Cup Raisins

Mix zucchini, sugar, oil, vanilla and eggs in large bowl. Stir in remaining ingredients. Pour into pans. Bake at 350 for 50 to 60 minutes or until wooden pick inserted in center comes out clean. Cool 10 min. then remove from pans. Wrap tightly at room temp. for 4 days or in the refrigerator for up to 10 days.
Make two loaves or 24 muffins (bake at 350 for 20 - 25 mins.)
With the flour use either all purpose or whole wheat or half and half.

Once they are all attractively arranged, drizzle with the olive oil, and sprinkle with the minced garlic and thyme. Season with salt and pepper; cook until golden and tender for about 25 minutes. Serve warm or at room temperature for the best flavor. Serves 4.

Chicken Zucchini Casserole

6 oz. (about 3 ½ cups) stuffing mix
¾ cup butter, melted
3 cups diced zucchini
2 cups cubed cooked chicken
1 can (10 ¾ oz.) condensed cream of chicken soup, undiluted
1 medium carrot, shredded
½ cup chopped onion
½ cup sour cream

In a large bowl, combine stuffing mix and butter. Set aside ½ cup for topping. Add the zucchini, chicken, soup, carrot, onion, and sour cream to the remaining stuffing mixture. Transfer to a greased 2-qt. baking dish. Sprinkle with reserved stuffing mixture. Bake, uncovered, at 350° for 40 - 45 minutes or until golden brown and bubbly.

Ham-Stuffed Squash Boats

4 medium yellow summer squash or zucchini (about 6 in.)
1 small onion, finely chopped
2 Tbsp butter or margarine
1 cup diced fully cooked ham
1/2 cup dry bread crumbs
1/2 cup shredded cheddar cheese
1/2 cup shredded Parmesan cheese (divided)
1 egg, beaten
1 tsp paprika
1/4 tsp pepper

Preheat oven to 425°F. Cut squash in half lengthwise; scoop out pulp, leaving a 3/8 in. shell. Chop pulp and set aside. In a large saucepan, cook shells in boiling water for 4-5 min. Drain and set aside. In another saucepan, saute onion in butter until tender; remove from heat. Add ham, bread crumbs, cheddar cheese, 1/4 cup of Parmesan cheese, egg, paprika, pepper and squash pulp; mix well. Spoon into shells. Place on lightly greased baking sheet. Sprinkle with remaining Parmesan. Bake at 425°F for 12 - 15 min or until heated through. Yield: 4 servings.

both are roughly the same except when it comes to protein. ALMOST ALL veggies include a reasonable amount of protein; fresh fruit does not.
