I'm not talking about girls who can't get a date, but ones that choose to wait. Usualy I don't find out untill after I become friends with them. What's up?
Ive noticed that this phenomenom seems to cross all religious and cultural boundrys.

Because they expect more from you!! They are special, and they take care of themselves "as a person" well. Not in a flashy, cheapy way, but more subtle and classy way. When girls focus their energy on themselves rather than on their outside looks, they glow from inside. They want you to be special, too!
These girls are, of course, more challenging to you. Because you cannot just impress them in the usual way. You have to win them over with your heart and soul.

Maybe because we have too many other important things in our lives to worry about than how much we're "getting it". Some women are so obsessed with sex that it takes over their lives; these types are often the so-called "beautiful people" who have nothing much to go on besides their looks. Perhaps virgins have higher moral standards, or they're just more interested in other types of sensuality than just the purely physical aspect of sex. Things like art, music, certain types of scents and other sensations, or even a good novel can be just as sensual or erotic as sex itself.

Equating virginity with "interesting" is an idea that would only occur in the mind of an inexperienced adolescent.

Because we don't want to spend the rest of our lives in a trailor park listening to Garth Brooks and squeezing out bastard children for the first worthless piece of crap that comes around and knocks us up because we lacked the self-restraint to keep our legs closed.

It also might be that I haven't given it out yet though because I'm a complete and total b*tch. But then again, you'll never lack for an intelligence conversation with me.

Never met a virgin, so I can't tell. And I am 49 years old and I am interested to women close to my age. So there are not many virgin women between 45 and 55.

I have found through out life that Virginity is way over rated.

There is a scientific phenomenon that equates Virginity with Twinkies. The more Twinkies you eat the greater odds you will maintain your virginity longer as your weight amasses.

In spite of what you hear not all girls want to start having sex when they are thirteen. Some just want to wait for the right partner and more power to them. This is alright.

often times girls who choose to wait are more interested in the mental emotional psychological side of the relationship than the physical side...thats probably the biggest reason why they are more interesting for you, because they arent focused or worried about the physical.

They have more interests than bed hoppers. The virgins are more interested in getting to know you as a person. They value who you are, not what a stud you are.

I think that depends on your definition of interesting.
So I'm going to answer whatever I'm assuming you mean.
Virgins probably seem more "interesting" because their choice affects their attitude toward other things in their lives, not dealing with sex.
