i always found it was easy to cook for one. i love leftovers so if i was making anything i'd make enough for a couple of days (sometimes for both dinner and lunch)

Turkey Barley Soup.
Save carcass from turkey...you'd be surprised how much meat is left on that sucker!
Boil carcass with 1 large onion in large 2 qt - 4 quart pot. Remove after most of the meat has fallen off the bone. Let cool. If there is any meat left on the carcass, take it off and put back into pot.
Add:
1 small bag carrot mini's cut in thirds
2 large celery stalks including foliage- chopped
Boil 20 minutes. Reduce to simmer.
Add:
6 chicken bullion cubes
1/2 cup of barley
2 large potatoes cut in small chunks.
Salt and Pepper to taste.
(My favorite leftover thanksgiving meal)
You can also store the carcass in the freezer until ready to use.

Beef Potato House Pie Casserole
3 large potatoes, peeled and chopped
1/4 cup milk
1 tablespoon butter
1 pound ground beef
1/2 onion, chopped
1/2 green bell pepper, chopped
salt and pepper to taste
1/2 (8 ounce) package processed American cheese or any other cheese. I did half american and half swiss(Pat's fave)
I had to season the beef with more than onions so just season it the way you normally do b/c it's very bland w/ only onions. I left out the green pepper b/c I was all out and it was just fine w/o.
Directions:
Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, then mash with milk and butter until smooth.
In a large, deep skillet over medium high heat, combine ground beef, onion and green pepper. Cook until beef is evenly brown. Drain excess fat. Season with salt and pepper.
In a deep casserole dish, spoon a layer of beef mixture. Spread a layer of mashed potato over the beef. Continue alternating layers until the dish is full. Top with cheese.
Bake in preheated oven for 20 minutes( I kept it in for lesser time. The cheese melts quickly)

Baked potatoe w/sour cream ,butter and some shredded cheese and bacon/// or baked chicken with salad, or a beef roast with potatoes,carrotts,celeryand onions// just put in roasting bag with all seasons (which comes as a kit)add rest of indigrents,throw in oven at 375 about 1 hr and depending on the size of roast will last a few meals, serve with a salad//

EASY LASAGNA
1 lb. ground beef
3 1/2 c. (32 oz.) thick spaghetti sauce
1 1/2 c. water
2 c. (15 oz.) Ricotta cheese
3 c. (15 oz.) shredded Mozzarella
1/2 c. grated Parmesan cheese
2 eggs
1/4 tsp. salt
1/4 tsp. pepper
8 oz. lasagna, uncooked
Brown beef in 3-quart saucepan; drain off excess fat. Add sauce and water; simmer about 10 minutes. Combine remaining ingredients, except lasagna, for filling. Pour about 1 cup sauce on bottom of 9x13x2-inch baking pan.
Layer 3 pieces of uncooked lasagna over sauce; cover with about 1 1/2 cups sauce. Spread half of cheese filling over sauce. Repeat layers of lasagna, sauce and cheese filling. Top with layer of lasagna and remaining sauce. Cover with aluminum foil and bake at 350 degrees for 50-60 minutes. Remove foil; bake about 10 minutes longer. Allow to stand 10 minutes before cutting.

Slice some chicken breast into strips, cook it up in a pan with seasoning and a little olive oil. You can put it with buttered pasta, rice, veggies, on salad, in a tortilla with cheese, etc.

For one person? Yourself? You can make soup, salad. Bbq some chicken, hamburger or steak. Make Pasta, homemade or Liptin Sidekicks.

spaghetti- before you brown the meat mush in some garlic salt and italian seasoning then add what ever flavor of sauce you like. it makes the meat soo good. very easy
