The cookies I bake are always thin and flat. The texture is awful- they always break when you hold them! Plus, they're chewy, but not good chewy. I'd like to make "corporate cookies." In other words, cookies that are as good as those major companies like Pepperidge Farm or Mr. Christie, or Mrs. Fields. Please give me advice on how to make amazing cookies!

I like homemade cookies, sounds like you are using too much butter, use Crisco, butter flavored or regular, comes in sticks measuring a cup.
Try it, you will be happier with the out come, besides that is what the big guys use, read the ingredients

A lot of the corporate cookies use lard or other shortening.

MRS. FIELDS COOKIES
2 c. brown sugar
1 1/2 c. white sugar
1 1/2 lbs. butter
3 beaten eggs
2 tsp. vanilla
6 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
2 (12 oz.) pkgs. chocolate chips
Fluff together brown sugar, white sugar and butter. Add beaten eggs and vanilla. Sift flour, baking soda and salt together and add. Fold in chocolate chips. Bake at 350 degrees for 10 to 12 minutes.

The same reason I cant make them like the Keebler elves..havent found a tree with an oven yet..

you'd have to buy a ton of preservatives and fake things. enjoy your flat cookies. you know what went into them. just work on perfecting them.
