Help, I planned on making meatloaf tonight, but I realized we don't have any eggs. Can I still make it? If so, what can I use to subsitute?

I promise this works, I actually PREFER it to eggs now!!

USE MAYO. About a quarter cup for each egg. There are eggs IN mayonaise, that's why this works, also it makes the meatloaf extra moist and gives it a little extra flavor. Enjoy!

Quick and Easy 'Meat loaf' Without Eggs
To make this meat loaf you will need the following ingredients:
1 1/2 lbs. ground, lean sirloin or similar volume in soy crumbles
1 package frozen creamed spinach
1 medium onion, chopped
1/3 cup seasoned bread crumbs
3/4 teaspoon of salt
1/4 teaspoon of ground pepper
1/2 teaspoon of onion powder
1/2 teaspoon of garlic powder
Preheat oven to 350 degrees.
Mix all ingredients together. If texture is too dry, add 1 tablespoon lightly flavored mustard thinned with water. If texture is too moist, add more bread crumbs until you've obtained desired consistency. [similar to other meat loaves you've made in the past] You can easily adjust seasonings to meet your tastes or dietary needs.

Pat into loaf pan with a rack if you have one, otherwise any loaf pan will do. Place into the middle of your oven. Cook for approximately 45 minutes or until nicely browned on top.

I do it all the time. instead of making one big meatloaf, make several small ones. I mix my meatloaf, pack them like hambergers and roll them into small loaves. Dont have to worry about them falling apart when they are small and everyone has there own little meatloaf. Ive even cut up different ingredients before, onions, peppers, applesauce, ketchup, bbq sauce, anything you can think of you might use in a meatloaf and let each family member make there own. The kids love it. And they fight over who gets to make dads.

If I don't have egg, I use a little milk, and add some ketchup. The trick is to get some moisture into the mixture to help it bind together. I also put Worcestershire sauce in mine.
