Baked Zucchini

4 medium zucchini
1/2 cup shredded cheese
2 tablespoons parmesan cheese
cracked pepper
1 tablespoon butter
1/2 teaspoon crushed garlic

Slice zucchini lengthwise and score diagonally across top of zucchinies.
Place in baking dish.
Baste with melted butter and garlic and sprinkle with cheese Bake in moderate oven for 15- 20 minutes or until tender and crisp.

6 small zucchini
16 oz. hot vegetable broth
2 tbl soybean margarine
2 tbl flour
1/2 - 1 cup grated cheddar cheese (optional)
Salt & pepper
In a sauce pan melt margarine over medium-low to medium heat. When margarine foams, add flour and mix very well.
Add a small amount of broth and whisk until no lumps remain and fully incorporated.
Continue whisking and adding broth until all broth is incorporated.
Cook over medium heat until sauce thickens. Add salt & pepper.
If using cheese add to the sauce now.
Remove from heat.
Clean zucchini and cut into 3/4 - 1 inch pieces
Place in a pan of boiling water for about 2-3 minutes.
Remove from pan and if not baking right away, place into ice water.
Place zucchini into a greased baking dish and pour sauce over the top. (You may not need all the sauce.)
Bake in a 350 oven for about 35 minutes or until tender and sauce has thickened.

Canned soup can be used in place of this sauce.

Cut zucchini in half and remove some of the center then microwave until almost cooked.
Add a mix of browned sausage and onions with tomato sauce.
Cover with stuffing mix-the small seasoned cubes
Bake at 350*F covered for 20-30minutes then add mozzarella or provolone cheese and bake uncovered until bubbly.

Also work well on the grill

Add a can of chopped tomatos, drained. Sprinkle with bread crumbs and parmesean cheese. Bake at 350 degrees until done.
