Well, if you have a whole chicken, just bake it like you would a turkey. They both look the same, it's just that a chicken is smaller, obviously. Here's what I do. Preheat the oven to 400. Rub the outside of the chicken with the cut side of a lemon. Sprinkle some salt and pepper on the outside and the inside of the chicken. Stuff the inside of the chicken with the leftover lemon halves, some garlic cloves, fresh herbs (rosemary, thyme, parsley, etc.) and if you can fit it in, some apple slices. Cover up the tips of the legs with foil. Place on a foil wrapped deep roasting pan or a roasting pan with a wire rack on top. Bake for 50 min. to 1 hr. or until done, basting with chicken broth every 15 min. I hope you like it. Happy cooking!

Rinse whole chicken under cold water and pat dry with paper towel. Wipe about 1 TB olive oil onto skin of chicken - all over (I rub on w/ paper towel, but you can use your hands). Sprinkle with salt and pepper. (If you have one, quarter a lemon or orange and squeeze over the chicken, then slide into the cavity of the chicken). Bake at 350 degrees for one to one and 1/2 hours depending on size of chicken - when you poke a fork into the thigh the juice will run clear when done.
