Stop talking.

If there's other people around when it happened and you feel embarassed, say something slightly sarcastic and silly like, "Was it something I said, darling?" then chuckle and talk to someone else or just walk away.

Another thing is, the person might have walked away inadvertantly and didn't mean to be rude. If you find yourself talking to them again, say "Isn't it annoying when you're talking someone and they walk away?" then kind of give a half smile. If the person didnt mean to, they'll probably smile back and apologize. If you get no reaction, though, they probably meant to and are in fact rude. In that case, walk away knowing that you clued them in on their irritating habit.

I either call them back to me to ask what their problem is and deal with it, or I write them off as rude as he** and don't bother with them again. That is the height of disrespect and attitude.
If, on the other hand, it is someone you care about and something has upset them in the conversation, they may just be taking a moment to get a grip or keep from saying something they will regret later. I have walked away to keep from letting loose too much anger or saying something I knew would be hurtful. I don't care what anyone says, words can hurt worse that a slap and the effects can last forever.

Ask them to come back because you haven't finished.
Otherwise, stop talking. The person who walked away is either inconsiderate or rude, or has ADD and can't sit still, behave and hold their attention for more than 5 minutes. (this part is sarcastic & not intended to be rude or discriminating to those with ADD)

This is "super rude!" I always speak up.
I'll say "Excuse me,We were in a conversation, don't you know how
rude it is to turn and walk off in the middle of a conversation?"
"where are your manners?" "were you raised in a zoo by animals?"

It would depend on who it was but I would probably say something like "Excuse me, but, I was talking to you" and then wait to see how they react or what they say. I think that is very rude. I don't even talk to people who aren't looking at me. I feel like, if they aren't focused enough to look at me then they aren't focused enough to listen either and I won't waste my time trying to talk to them.
