Cubed steak meat and it has to be a good cut with some fat on it for flavor
A Classic Beef Stroganoff Recipe




Beef Stroganoff Recipe with Beef Fillet, Butter, Onions, Mushroons & Sour Cream.



INGREDIENTS:



1 lb (450g) Fillet of Beef
1 1/2 Medium Onions
4 oz (100g) Closed Cap Mushrooms
1 oz (25g) Butter
1/8 Pint (75ml) Soured Cream
Salt & Pepper



METHOD:



Slice the Beef into 2in (5cm) strips - the thickness of your finger. Slice the Onions thinly. Cut the stems off the Mushrooms and also slice thinly.

Over a low heat melt half the Butter (with a tad of Olive Oil) in a Frying Pan and add the Onions. Move around regularly until they are soft and see through. It is important that they do not burn. Add the sliced Mushrooms and toss around for a minute or so until they are soft and coated with the juices.

Spoon out the Onions and Mushrooms into a dish.

Add the remaining Butter to the Frying Pan and allow it to get very hot - so that it froths. Drop in the Beef strips and fry briskly on all sides. The Beef really needs only to be browned and not over-cooked in the middle. A couple of minutes at the most.

Tip the Onions and Mushrooms back into the Frying Pan. Season well with Salt & Pepper. Add the Soured Cream and cook at the same heat for another minute so that the Cream reduces to a syrupy consistency.

Serve at once.

Serves 2 as a Main Meal.

The crockpot is the easiest way to make it. And yes, a cut of beef is better than ground beef anyday. Here's the recipe I use:

INGREDIENTS:
1 London Broil steak, about 1 1/2 to 2 pounds, thinly sliced
1 can cream of mushroom soup
1/2 cup chopped onions, optional
8 ounces sliced mushrooms, optional
1 tablespoon Kitchen Bouquet or other browning sauce
1/2 cup sour cream

PREPARATION:
Combine steak, soup, onions, mushrooms and browning sauce in crockpot. Cover and cook on low for 7 to 9 hours. Add sour cream 20 minutes before serving time. Serve over noodles or rice.


One last suggestion: Partially freeze the London Broil before you slice it. It makes it easier to slice it thin!

Put the steak in a crock pot and pour 1/2 jar of salsa over it (for the salt). Do this the day before you're making stroganoff.

Any other way and the steak will be tough.

Beef Stroganoff Recipe

1-2 lb. grass-fed round steak (cut in cubes or strips)
2 T olive oil
2 T butter
1/2 C diced onions
1-2 garlic cloves
1/2 lb. fresh mushrooms
1 can cream of chicken soup
1 can cream of mushroom soup
1 T soy sauce
1 T Worcestershire sauce
1 C sour cream
8 oz. wide egg noodles

Melt oil and butter in pan. Add beef to pan. When beef is browned, remove it from the pan.

Add onions, garlic, mushrooms and sauté until onions are glazed and clear.

Add soups, soy sauce, Worcestershire sauce while stirring to combine.

Add sour cream and stir. Add browned beef. Baked covered in 275 degree oven 2-3 hrs. or cook in crock pot on low.

Serve over wide cooked egg noodles.

I have used cheap good stew meat cut up and also hamburger meat, which we then call it SOS. Make it quick with the stew meat, onions, and mushrooms cooked in a pan until tender and then add your mushroom soup and sour cream to thicken and make the sauce. Put over rice or noodles. Yum!

This is my favorite food. Me and my sister were just talking about that. We both have tryed the steak kind and it is the best I we have had. Try it out and choose what your taste is.

Use sirloin steak and slice it thin. Cook it quickley and have the brown sauce and cooked mushrooms ready to go. Do not over cook and finish with sour cream,.

Oh, BEES STROKIN OFF, huh?? LOL.
But kidding aside, I think steak is the best meat to use. It's got a whole better taste for it than hamburger.

Filet mignon works well. Partially freeze it to making thin slicing easier.
