Here's one that I make and truly enjoy. I found it at allrecipes.com. It's rated 5 out of 5 stars and it's a huge hit in our house. I use a spicy smoked sausage as we like things with a little heat.

Shrimp and Chicken Jambalaya

INGREDIENTS:
1 pound fully cooked smoked sausage link, cut into 1/4-inch slices
2 cups chopped onion
2 cups sliced celery
2 cups chopped green bell pepper
1/4 cup chopped jalapeno peppers
1 tablespoon minced garlic
1 (28 ounce) can whole tomatoes
3 cups water
2 cups cooked, cubed chicken
2 cups cubed ham
1 cup uncooked long-grain white rice
1 tablespoon HERB-OX® Chicken Flavored Bouillon Granules
1 1/2 teaspoons paprika
1/2 teaspoon dried basil leaves
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon dried thyme leaves
1/8 teaspoon cayenne pepper, or to taste
2 bay leaves
1 pound fresh or frozen raw shrimp, shelled and deveined
Hot pepper sauce

DIRECTIONS:
In Dutch oven over medium heat, cook sausage, onion, celery, peppers, and garlic until tender. Add remaining ingredients except shrimp and hot pepper sauce. Bring to a boil. Cover; reduce heat and simmer 20 to 25 minutes or until rice is tender. Add shrimp. Cook 2 to 3 minutes or until shrimp turns pink. Remove bay leaves. Serve with hot pepper sauce.

Mexican casserole! If you like mexican food this is a great casserole to try, especially because it's easy to make!
Cook about two cups of regular white rice. While it's steaming, brown a package of ground meat on the stove, along with half a cup of diced onions. (I like ground turkey because it's better for you, but ground beef is also good). When the meat is browned, add taco seasoning to taste. Your rice should be done by this time. Mix it with 1\2 a cup of your favorite salsa. Layer half of this into the bottom of a deep casserole dish. Add about half of your ground meat,and top that with a layer of shredded cheddar cheese. Add a layer of black beans, a layer of corn, a layer of stewed tomatoes ( the kind with spicy seasoning works best) and another of your salsa rice and taco meat. Top this with a thick layer of cheddar cheese and sliced olives. Bake for half an hour in a 350-365 degree oven. Serve this with tortilla chips and salsa. It's delicious!
You can tailor this casserole to your family's tastes. If you like it extra spicy, add more seasonings and salsa. If you don't like an ingredient, omit it. The Black beans can be replaced with refried beans or pinto beans. Enjoy!

1 lb hash brown potatoes, thawed
1 lb cheddar, shredded
8 oz sour cream
1 can of cream of chicken soup
1 can cream of mushroom soup (or use 2 cans of cream of chicken)
2 cups diced ham
salt and pepper to taste

Mix everthing together and bake at 350 for 45-60 minutes.

especially look at the meat casseroles and the potato casseroles!
there is one with meat and french fries, etc. and a another with tater tots and meat!
so many great ones!
