2 tablespoons of butter
2 tablespoons of flour
2 cups of milk (or cream or buttermilk)
1/3 cup of fresh grated parmasean cheese

Make your roux with the flour and butter
Slowly add the milk over medium heat
Add the cheese

VARIATIONS:

Add hot sauce

Add a can of shredded crab meat

Ingredients:
1/2 cup butter or margarine
2/3 cup heavy cream
1 1/4 cup grated Parmesan cheese
1/4 teaspoon salt
dash of pepper
noodles or fettuccine, cooked


Directions:

Cook noodles or fettuccine according to package directions. Heat butter and cream in saucepan until butter is melted. Remove from heat. Add 1 cup Parmesan cheese, salt and pepper; stir until sauce is blended and fairly smooth. Add to drained noodles and toss until they are well coated. Sprinkle with remaining cheese.

Variation: Add cooked shrimp, crab or mushrooms.

This recipe for Alfredo Sauce serves/makes 2 cups

Use the same ingredients that everyone else said to use (except flour. There's no reason to make a roux unless you are afraid of breaking the sauce, then I would suggest adding some corn starch to your butter b/c it has no flavor).

Saute the butter until it's slightly browned (that gives it the true alfredo flavor) add your heaving whipping cream very slowly and turn up the heat because your going to loose alot of heat by adding the cream. Add about 1/4 of teaspoon of fresh ground nutmeg to the sauce. I know it sounds strange to add nutmeg to a savory dish, but it hightens the fatty flavor of the cream and the cheese. You won't notice the nutmeg at all you'll just notice the sauce seems fuller. Add your cheese and serve!

INGREDIENTS:

* 1 pint heavy whipping cream
* 1/2 cup butter
* 1 1/2 cups grated Parmesan cheese

DIRECTIONS:

1. In a medium saucepan combine whipping cream, butter or margarine, and grated Parmesan cheese. Cook over medium low heat until smooth. Remove from heat. Sauce will thicken upon standing.

Alfredo Sauce

2 cups lactaid lactose-free milk
4 tablespoons fleishmann lactose-free unsalted margarine
2 tablespoons whole-wheat flour or white flour (your choice)
1/2 cup parmesan cheese (i use lactose free)
1/2 cup mozzarella cheese (i use lactose free)
2 cloves garlic (minced) or garlic salt (add as much as you need for taste)



1. In a medium sauce pan, melt butter over medium-low heat.
2. Add Garlic and stir-fry for 2 to 3 minutes.
3. Stir in flour until well blended.
4. Add Milk.
5. Stir sauce over medium-low heat.
6. Don't let it come to a boil or stick to the bottom of the pot.
7. Reduce the heat if necessary.
8. Allow sauce to thicken (takes about 20 minutes) if it hasn't thickened add little bit of cornstarch and water (mixed together) as a thickner, stirring frequently.
9. When sauce is near desired thickness add the parmensan and mozza cheese.
10. Stir to melt.

2-4 servings
40 minutes (10 min prep)

Fettuccine with Cream, Basil and Romano
Ingredients
(4 servings)
4 ea Bacon slices; chopped thick
1/2 c Whipping cream

1 x Or:
1/3 c Basil; chopped fresh
1 x Salt and freshly ground pepp
1 x Romano; freshly grated
4 ea Green onions; chopped
1/2 c Parmesan; freshly grated
1/2 c Romano; freshly grated
1/2 lb Fettuccine
1 x Parmesan; freshly grated
Instructions
Cook bacon in heavy medium skillet over medium heat until beginning to brown. Add green onions and stir until softened, about 1 minute. Add cream and simmer until beginning to thicken, about 1 minute. Mix in 1/2 cup Romano cheese and chopped fresh basil. Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return to hot pot. Add sauce and stir to coat. Season with salt and pepper. Serve immediately, passing additional cheese separately. *** My notes: When I made this, I used 1 cup whipping cream, 1/2 cup each Parmesan and Romano, 1 tbsp dried basil, and substituted 4 or 5 thin slices of Prosciutto for the bacon- frying slightly in butter. I used about 6 ounces of "Pesto Linguini", which is a thinner pasta containing basil. We like LOTS of sauce!
