okay i am going to give you a meatloaf recipe:
1 pound lean ground beef
1 clove garlic or 1/8 teaspoon garlic powder
1 small onion
2 slices bread with crust
1/4 cup milk
2 teaspoons Worcestershire sause
1 teaspoon chopped fresh or 1/4 teaspoon dried sage
leaves
1/4 teaspoon salt
1/4 teaspoon ground mustard, dry
1/8 teaspoon pepper
1 egg
1/3 cup of ketchup, chili sauce or barbecue sauce.
1. Heat the oven to 350*. Break up the beafinto large pieces in a large bowl, using a fork.
2. Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
3. Tear the bread into small pieces and add to beef mixture.
4. Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
5. Place the beef mixture in the ungreased baking pan. Almost any size pan will work; just be sure the pan has sides on it to catch the juices that will accumulate while the meat loaf bakes. Shape the mixture into an 8x4- inch loaf in the pan, and spread ketchup over the top.
6. Bake uncovered 50 to 60 minutes or until beef in center of loaf is no longer pink. A meat thermometer inserted in the center of the loaf should read 160*. Let the loaf stand 5 minutes, so it will be easier to remove from the pan. Cut the loaf into slices.

Vegan meatloaf....yummy!...1 cup cooked lentils, 1 cup cooked white (Great Northern...Navy) beans, 1/4 cup cornstarch, 1/4 teaspoon chopped onions, 1/2 cup bread crumbs, 1/4 cup uncooked oatmeal, 1/2 teaspoon garlic powder, 1/4 teaspoon black pepper, 1/2 teapoon sea salt, 1/4 teaspoon oregano, 1/4 cup tomato paste and a dash of soy sauce. Mix all the ingredients with your hands and place into a loafpan greased with olive oil. Top with more tomato paste if desired. Cook at 350 F for 45 minutes. Serve with mashed potatoes made with plain soymilk and vegan margarine and carrots with parsley and vegan margarine....wonderful for company!

SOUTHWEST MEATLOAF
Makes 6-8 servings
2 lbs. ground chuck
1 cup coarsely crushed tortilla chips
1/3 cup taco sauce
2 Tbsp. taco seasoning mix
1 egg, lightly beaten
½ cup grated cheese, such as a combination of cheddar and Monterey Jack
Combine all ingredients. Press into loaf pan. Bake at 325 degrees for 1 hour, or until top is brown and loaf shrinks from edges.

Chicken Parmesan! It's pretty easy too!
Boneless chicken breasts
A jar of your favorite spaghetti sauce doctored up with the usual Italian spices and cooked for a while on the stove
Mozzarella cheese on top
Bake the chicken for about 15 minutes first then top with the sauce and cheese and bake for another 10 minutes or until the cheese is melted but not crusty.

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
In a separate small bowl, combine the brown sugar, mustard and Salsa. Mix well and pour over the meatloaf.
Bake at 350 degrees F (175 degrees C) for 1 hour.

Side dish suggestion:
Use chunked potatoes, by themselves, or the veggies of your choice, alone or with the potatoes.
1 packet of onion soup mix
1/3 cup olive oil
raw potatoes or veggie (or some of each)
Preheat oven to 400 degrees
Toss potatoes with oil and onion soup mix in a shallow baking dish
Bake for 40 minutes or until fork tender, stirring occassionally to evenly coat and cook.

The secret to good meatloaf is to add a packet of Lipton's onion soup mix along with your other ingredients into the hamburger..Oh yes and use a good grade of hamburger meat

1 lb ground round
1 lb ground chuck
(that makes it juicy)
Chopped bell pepper, onion, garlic
Add 1 cup Italian bread crumbs or just plain bread crumbs
1 egg
Rotel tomatoes or just tomatoes with seasoning...i.e. cayenne, salt, pepper, oregano, basil.
I have used tomato soup with seasonings as a baste, or use Ragu as a baste...get creative with it. Can't go wrong with meatloaf.
