In a document typed up already, delete any header you have inserted by going to View - Header and Footer, select it and delete it.
From the FILE menu choose Page Setup
Click on the Layout Tab
Under Headers and Footers, put a tick in front of Different first page.
Now on the first page of your document insert the header and it won't show on the other pages.
For future documents you can set up the page like this before you type.

A better idea would be to set up a blank document in the way described above with only the Header on it. Then save the document as a template, click File - SaveAs and down at the bottom, where it says 'Save as type' choose Document template from the drop down option. You could name the document something like 'My letterhead'. Now when you want to type using the letter head all you have to do is click on File - New and 'My letterhead' will be among the General options.

Under the Format menu, choose Document. If you aren't on the layout pane, go there.

Click "Different first page." Now the document knows you want the first page to be different from the rest. Delete the header on page two.

(The first time I submitted this, I had it backwards!)
