Because the heat causes them to rise, but when they cool down, they become flat.

thats normal because when they are in the oven the steam that comes out of the cookies is puffing the cookie out and when they are out of the oven the steam is no longer being created due to the absence of heat. If you want your cookies to look bigger than you will need a different recipie that leans more to a crisp cookie rather than a chewy one. Or you can try baking your present recipe a little longer. try intervals of 2 minutes more at a time untill you get the product you want.

First of all, I'm hoping there's no yeast in your cookie dough. If there is, then they're some kind of bread, not cookies.

Secondly, although you say they look good during baking and fall flat after you take them out, you can still try refrigerating your dough prior to baking. It's more than likely that it's the butter. If you're using margarine, switch to either butter, vegetable shortening or a combination of the 2.

Good luck.

there is no yeast in chocolate chip cookies, so disregard those answers. too much sugar or too much butter will cause them to go flat as they cool. measure carefully when making the dough, be sure your oven is preheated to the correct temperature before baking, and be sure to leave them in for the amount of time called for in the recipe. my chocolate chip cookies turn out perfectly every time i follow my own advice. good luck :)

Last time I checked, yeast wasn't used in chocolate chip cookies. (Sigh...)

Anyway, my experience has shown me that when my CC cookies come out flat, it's either because I needed just a bit more flour, or because all butter cookies tend to spread. Try either adding a bit more flour, or half butter, half margarine. This should help. Good luck.

cuz when they in the oven the heat causes them to rise because of the ingredients in your cookies, but when they reach normal cool air they shrink. if you want your cookies to stay big you should put more ingredients in them so they go even bigger in the oven then when they come out they'll still shrink a bit but be bigger than they are now.

It's usually normal for them to flatten a little while cooling down, but if they're flattening like crazy and become hard then it may be cos you used melted butter instead of softened butter, depending on your recipe tho, but it used to be my problem when i made mine. The texture of the butter's the key to making chewy cookies. Make sure you rub the butter in the dough instead of mixing them while it's melted. It sure helps with the cookie's chewiness or simply to prevent it from hardening! hope that helps!

oh, just in case you're interested, i have this cc cookie recipe that turns out GREAT every time and you can change the flavor to whatever you like cos it has instant pudding mix in it (it's not chewy tho) http://cookie.allrecipes.com/az/AwardWinningSoftChocolateC.asp.
And a chewy one: http://cookie.allrecipes.com/az/BstBigFtChwyChcltChipCki.asp

When they are in the oven, the hot air fills the air pockets much like hot air fills a hot air balloon. As the air cools, the air pockets fall flat, again, like the balloon on a hot air balloon when the air inside is no longer being heated.

Steam poofs them up. so they look big in the oven. They cool off and all the steam goes out. They are supposed to be flat, though.
