Use a food processor to finely mince fresh/frozen vegetables and add these in to the meatballs. A good way to sneak in a serving of veggies with out them know it. I would serve with pasta and tomatoe sauce instead of bbq and gravy

When I was small...my mom made a tomato soup, that had lots and lots of tiny meatballs in it...like the size of marbles.
That was simply fun to eat..search for meatballs with a spoon, pefect for a 5 year old!

Try Asian style.
Get some really thick soy sauce, the kind like mollasses.
Make meat balls. Fry them till brown.
Fry some sliced onions and put in meatballs and 4 tbsp of soy and 1 bowl water. Boil till reduced to about a quarter in volumn.
Serve with rice and vege.

The best meatballs I ever had were made with cooked Red River Cereal (a kind of multigrain with flax cooked cereal) mixed with the meat and diced onions etc... My sister in law uses gingerale mixed with "kicker" ketchup (spiced up) as a sauce and bakes them in the oven. I love them that way. No link, but basically, meat, cereal, diced onion, a bit of garlic, some beef boullion powder (like OXO), roll into balls, and cover with a mixture of ketchup and gingerale with a dash or two of hot sauce...cover with foil...bake until done. Serve with a salad and green beans or other favorite veggy. (sometimes I prefry the meatballs a bit in a skillet with oil before putting them into covered baking dish)

I like to mix cream of mushroom soup and a can of french onion soup and simmer meatballs in mixture. Really good served over rice or egg noodles.
The soups made a really good sauce and kids really like it.

How about meatballs using some turkey, lamb, chard, rice? Seems like things could be worse -- he could want only chicken nuggets and marshmallows.
