It depends...my ideal meal to accompany your Baked Flounder would be:
Asparagus tips with lemon/caper sauce or lemon/butter sauce (yum!)
Ingredients :
12 x asparagus spears
1/4 cup (1/2 stick) butter
1 tsp lemon juice
4 sm wild mushrooms, thinly sliced (OPTIONAL)
Procedure: Trim the tips from the asparagus, approximately the top 2 or 3 inches, saving the stalks for another use.
Melt the butter in a heavy skillet over medium heat and add the lemon juice. Add the mushrooms and saute until they begin to darken and release their liquid, about 5 minutes.
Add the asparagus tips to the skillet and continue cooking for about 3 minutes, or until the asparagus are just tender. Serve at once.

1 stick butter
Minced garlic
1 c. rice
2 c. hot water
Chicken bouillon
1/3 c. Parmesan cheese
Melt butter in frying pan with garlic to taste. Add rice and fry until white. Put rice, water and bouillon into 1 1/2 quart baking dish. Bake at 350 degrees for 20 minutes or until water is all absorbed. Before serving, stir in cheese.

How about rice pilaf?
Saute a handful of broken vermicelli in a little shortening or oil in a medium-sized pot. When lightly browned, remove from stove.
Add 1 cup of white rice, stir together with the vermicelli.
Add 1 can of chicken broth, 1 chicken bouillon cube, 1/4 cup water, and 3 or 4 tablespoons butter. Add salt and pepper to taste. Bring to a boil, turn stove to low and simmer for about 30 minutes. Do not lift lid while pilaf is cooking. After lid is lifted and pilaf is done, stir pilaf and return lid for about 15 minutes. Let sit and then serve. Absolutely delicious with fish and chicken, beef or whatever.
