Don't know if you have beef or pork chorizo, but I find it normally to be greasier than italian, and the grease is what holds the "Hot" taste. If you want to tone the heat down, you might consider cooking the chorizo, then "rinsing" it with some beef broth or boullion. That will "wash" the oil and heat down the drain, and basically give you seasoned sauteed ground meat to put in your sauce. I would not try to use it in chunks, unless you choose to boil the chunks in like 2 different baths of water, and discard he water.
It will work, just add some peppers and onions and call it "putanesca" sauce. The family will think you are great.

Spaghetti sauce( Marinara, Tomato sauce, ect) is a great base to go with many things. The ground beef type sauce is form the Bologna area is called a bolongase sauce(poor spelling). I like an Italian sausage left in the casing and cut across the sausage to give you little meat pillows. Add slivered onions, mushrooms and green peppers and serve over linguine. The tomato based sauces go well with all meats ground or chunked. There are also the white spaghetti sauces. I like the carbonara. A white sauce made with chopped cooked bacon and onion and thickened with parmigiana cheese. This used to be a miners lunch dish.

RE:
Can I use chorizo in my spaghetti sauce? I'm out of Italian, beef & turkey. Will it be gross or what?
I usually only use chorizo for breakfast with eggs. Please hurry. The chorizo is thawing now in the microwave. Thanks!

It would't hurt to try. It's ground pork.
The spices in it might add an extra flair to your spaghetti.
Experiment and send me a sample.

I don't see why not.
You'll probably want to adjust the spices, or things may clash. Taste it before adding your usual spices.
You might even be able to find a recipe on Food network's web site.
