Cook up a batch of reservations! That's my favorite kind of cooking. Or you could do Subway or something simple but somewhat healthy.

It's summertime, you could whip up a pasta, veggies and meat salad in either a vinegar/oil based dressing or a mayo concoction and serve with sliced cucumbers and tomatoes.

Do a simple pasta in olive oil with garlic and Parmesan and serve with a salad.

You could stock up on frozen, pre-cooked roasts and stuff like that so you just have to warm it up.

Sounds like you need a break from recipe planning though. If you're doing all the cooking because the spouse brings home the income, then it might be time to try switching up some household duties if the spouse could take over the cooking for a while or even a couple nights a week. There's a huge sense of pride in people when they create meals for others when they don't normally do those things. You can negotiate something so you'll feel fresher in the kitchen.

Good luck and good eating!

this is really good and easy if you have a crock pot

Pork Stew

Ingredients:
1 Tbs oil
1 1/2 lbs boneless pork loin, cut into 1-inch cubes
1/2 lb baby carrots
1/2 lb new potatoes, quartered
1 red pepper, seeded and coarsely chopped
1 16-oz. package frozen mixed vegetables
1 8-oz. can whole baby corn, drained
1/2 tsp salt
1 tsp black pepper
1/2 tsp dried marjoram leaves
1 can reduced sodium chicken broth
2 packets brown gravy mix

Directions:
Heat oil in a skillet over medium-high heat. Add pork cubes and brown. In the stoneware, combine pork and remaining ingredients, except broth and gravy mix. Combine broth and gravy mix and pour over ingredients in the stoneware. Cover cook on Low 8 to 10 hours or on High 4 to 5 hours.

I'm the same way and it seems I make the same dishes over and over. For a one dish has it all you could make a fried rice dish with veggies and meat of your choice. Or a fast but fattening stand by for I don't know what to fix for supper dish I make hamburger gravy and toast. If I feel like it I will fry up some potatoes too. Maybe open a can of green beans or sweet peas to go along side. If you want more exotic dishes, I don't know what to tell you.

Go to the food network web site. Rachel Ray has a show every weekday where she cooks 30 minute meals.

Look up some of her recipes.

Also, make a big list of all the things you cook. When you're out of ideas, consult it.

When I don't know what to cook I usually make a soup of some sort....a quick and healthy one is mushroom soup:-

1 Onion (usually a large one...whatever the quantity of (mushrooms)
Mushrooms (quantity dependent on how much soup you want to make)
1 Stock Cube (any)
Mixed herbs - Salt & Pepper to flavour.

Put all in pan boil and simmer for about 30 minutes .......Let cool.....Whizz.....add some milk or cream....and Bob's your uncle! All done!

Otherwise I make a salad with cuscus......works every time!

Put Pasta into boiling water. Cut up Feta cheese into squares, and open a jar of black olives. Throw together anything you have that is salad-ish. Drain the pasta, and stir in olive oil and the cheese and olives. Reheat if necessary. White wine goes nicely.
