My top 2 are Brie and any cheddar.

Depends on what. I love a lot of cheeses. Brie is great for a melted cheese. Any sort of cheddar with crackers. I love a good provolone for a stringy cheese, and of course if you're eating a pastrami sandwich you need some swiss!
