Generally when cooking a fillet of beef with a sauce you cut it down to a 1/2 thick medallion. Pan sear each side of the beef, about a minute on each side, remove from pan, add a minced shallot, and some butter, saute until tender add some sliced mushroom, and cook for 2-3 minutes. To this add a cup of red wine. In a separate pot have ready a cup of Demi glaze, or brown sauce mix. It can be bought at your grocery store. Add this to the wine, and reduce by 1/2. This is you sauce. Place the steaks back in for a few second so they come up to temperature and serve. Remove the beef from the pan and place on dinner plate, ladle a little sauce of 1 side of the beef, you do not have to saturate the beef. This will be for a nice presentation.

Try searing the filet in a hot skillet, preferably cast iron for 5min. on each side till you get a brown crust. Do not use a fork to turn, but rather use a spatula. Turn the heat down and cook till the inside temp. reaches 150-160 or has a slight give to it when poked with finger. Set aside to rest. As far as a sauce, if your grocery store carries it, try the Knorrs brand Bernaise sauce. Just follow the directions on package and spoon sauce over filet.
