Yes! i have raised many kittens...when they start scratching, lay your finger firmly between their ears and say NO loudly. keep repeating it...they will eventually learn not to do it.
it is important to teach them this before they get old enough to do real damage.

No. Cats are hunters, and their "play" is typically rough and uses teeth and claws. Some cats naturally learn not to scratch the hand the feeds them, but some never do. Your best bet is just to keep her nails trimmed to avoid any serious damage to your hand. When she gets older, you could try a product called soft claws or soft paws, they are soft plastic nail covers that slip over the natural claws on the front feet. They do not hurt the cat at all, but they prevent scratching and carpet digging. The only downside is they fall off every 2-4 weeks and must be replaced. But I've used them on my cats for over 5 years and they are wonderful.

*** Declawing is a disgusting and CRUEL act, read some literature and you will see how terrible it is. You don't just remove the claw, it's the same as cutting off the last joint of your finger, bone skin and all. Cats can end up with severe pain, deformed feet, inability to walk, and even die from this surgery.

RE:
Is there a way to teach your kitten to control their claws (not to take them out) while playing with you?

I think with a kitten as with a young child their nervous systems are not sufficiently mature to control the retraction of claws. Of course with children I am referring to their ability to control bladders and bowels.

I think the training suggestions given are right on. I might just add that mother cats correct their kittens' bad behavior by hissing at them. So I would do that too along with "NO" or "Ouch". Keep kitten's nails well trimmed so you don't get hurt.

Be very consistent with the training and keep it simple. Kitten will get the message and then, too, it may be a matter of neurological maturity and it won't happen overnight.

Get a scratching post or spray Apple Bitter near the furniture you're on. You can also get their claws cut.

You can sort of teach them by walking away from the play when they get too ruff. Also you should keep their nails trimmed. If you don't already have a nail trimmer for you cat, get one, and trim it's nails once a week. Regularly trimmed nails are nowhere near as sharp as untrimmed nails.

yes, take your cat to your vet's office and have him/her front declawed. only do the fronts, because if your cat ever were to get out, they would have a very low chance of survival with no claws at all.
